Chop pineapple…canned pineapple is OK. Chop equal volume of onion, red onion by preference or leeks. Stir in a frying pan with extra virgin olive oil…just a dash. Take twenty pods of green cardamon and with a sharp knife get the little black seeds out and put in the mix as you stir. Dust the top with flour (you’re about four minutes from the start) and stir to absorb the oil and stick it all together. Keep cooking for another two minutes to cook the flour through…keep stirring. Spoon into balls onto plates with slices of sliced sweet tomatoes.
