What are some good tasting healthy recipes for dinner you like to make, please share…?

I am trying to adapt to a healthier life style, and would appreciate any healthy recipes you have… Thank you very much.

    Marinate chicken breasts in your favorita salsa for 24 hours and bake for 25 mins @ 350 degrees.

    CHicken breasts and potatos, cube the potatos and place in a bag with the thawed chicken breasts, put in a bag of lipton onion soup mix (dry) and shake like hell. bake covered together at 400 for about 45 min. easy and healthy. OH, I throw in cut carrots too, they bake great!

    I make enormous chopped salads with anything I can find: lettuce, spinach, bell peppers, green onions, cheese, hardboiled eggs, sliced leftover meats, pine nuts, tomatoes, avocadoes…even my husband will eat that!

    Here’s a recipe I made just last night:

    Vegetable frittata

    Wash and chop finely the following vegetables:

    a head of lettuce
    a bunch of spinach
    a bunch of parsley
    a bunch of green onions
    3 leeks
    a green bell pepper (optional)

    Toss the vegetables together with a half cup of chopped walnuts, almonds or pistachios and a half cup of flour.

    Spray cooking spray on a 13″ x 9″ baking pan (LOTS of cooking spray!) and place the vegetable mixture in it.

    Beat 8 eggs (or use Eggbeaters), add a half cup of skim milk and 2 tablespoons of ground pepper. Pour egg mixture over the vegetables and bake for 1 hour at 350 degrees. Sprinkle shredded mozzarella cheese on top of the frittata before serving.

    Lately, Ive been making healthy bean salads starting with a variety of dried beans, softened then cooked till al dente. Top with dressing of choice – add chopped onion, garlic, veggies, cheese – whatever your choice is. Beans (and tofu) take on the flavor of whatever is around them so they are very versatile.
    If you toss in rice or Quinoa or bulgar or something, you create a perfect protein, better than a meat dish!
    Look into Quinoa if you are not familiar with it. Cheap, easy, and VERY high in protein

    This is something that is very easy and very good for you, it makes the house smell nice and inviting:

    2 skinless/boneless chicken breasts cut in bite size chunks
    2 chicken bullion cubes
    6 cups water
    I can of hominy
    1 cup of sliced carrots
    1 small onion chopped
    1 bell pepper chopped
    1 peeled potato diced
    1 teaspoon of tarragon, rose marry or cilantro
    Salt and pepper to taste

    you can just add all ingredients together and turn on the heat and it will be done in 1/2 hour. Good with cheesy bread.
