How do you measure an ounce of steak?
I don’t have a kitchen scale and it would be nice to be able to separate steaks into 3 ounce portions/1 ounce chunks, does anyone know how to approximate the measurements?

Either invest in a scale (ounce) or you can roughly figure it out. I would say 1 ounce of cubes is about 3 each of the cubes.

The palm of your hand is supposed to be 5 ounces, so take 1/5 of that size.

I used to cut steaks for major steak chains. The best way to answer this question is to get yourself a cheap scale and practice. I used to be able to cut into a slab and pull out a 10oz steak everytime. It’s called “meatcutter’s eye.” Whatever you are making is not quite that critical, however, it’s nice to develop the ability to do things consistently. Here is how I used to train cutters, and I think it will work for you.
Get a cheap cut of mean that isnt full of fat. Top sirloin, bottom round, london broil. London broil is probably best. Cut it into one inch strips. Take each strip and cube it. But weigh each cube as you go along to see what an ounce “looks” like. After a few cuts, you will become consistent with your cuts.
HINT: An ounce isnt very much. Maybe an inch by an inch. It probably isnt critical. But when you see what it looks like after measuring, you wont really be that concerned.
Another thing to remember is that there is a difference in the density of cuts. An ounce of Filet is not going to be the same size as an ounce of Top Sirloin. But I wouldnt worry about the difference.

you take how many ounces the steak is and cut it into that many equally sized Peaces.
