Does anyone have any easy recipes for chicken?

I get tired of making the same chicken dishes over and over again. Anyone have any easy chicken recipes that are unique?

    1. Bourbon Chicken

    2 lbs boneless chicken breasts, cut into bite size pieces
    1-2 tablespoon olive oil
    1 garlic clove, crushed
    1/4 teaspoon ginger
    3/4 teaspoon crushed red pepper flakes
    1/4 cup apple juice
    1/3 cup light brown sugar
    2 tablespoons ketchup
    1 tablespoon cider vinegar
    1/2 cup water
    1/3 cup soy sauce

    Heat oil in a large skillet.
    Add chicken pieces and cook until lightly browned.
    Remove Chicken.
    Add remaining ingredients, heating over medium Heat until well mixed and dissolved.
    Add chicken and bring to a hard boil.
    Reduce heat and simmer for 20 minutes.
    Serve over hot rice and ENJOY.

    2. Crockpot Cream Cheese Chicken
    3 lbs chicken pieces
    1 (2/3 ounce) package Italian salad dressing mix
    4 tablespoons melted butter (divided)
    1 small onion, chopped
    1 garlic clove, chopped
    1 (10 1/2 ounce) can cream of chicken soup
    8 ounces cream cheese
    1/2 cup chicken broth

    Place chicken pieces in crockpot and sprinkle Italian seasoning over chicken.Sprinkle with 2 tablespoons melted butter.
    Cook on low for 4-6 hours.
    Melt 2 tablespoons butter in a sauce pan and saute onion and garlic. Add Cream of Chicken Soup, cream cheese, and chicken broth. Stir until smooth.
    Add this mixture to crockpot and cook on low for an additional hour.

    3. Sticky Chicken

    4 teaspoons salt
    2 teaspoons paprika
    1 teaspoon cayenne pepper
    1 teaspoon onion powder
    1 teaspoon thyme
    1 teaspoon white pepper
    1/2 teaspoon garlic powder
    1/2 teaspoon black pepper
    1 large roasting chicken
    2 large onions, peeled and quartered

    (Day 1) Blend all spices together and set aside.
    Remove neck and giblets from chicken cavity, rinse well inside and out, and pat dry with paper towels.
    Rub with spice mixture, both inside and out, then stuff cavity with onions.
    Wrap in a resealable”food grade” plastic bag (I just use a new, unscented, white kitchen can liner.), tie closed, and refrigerate overnight.
    (Day 2) Remove from plastic bag and place in a shallow baking pan.
    Roast uncovered in a 250 F oven 5 hours.
    (This is not an error, I repeat, 250 F for 5 hours!) If the chicken contains a pop-up thermometer, ignore it.
    This recipe is SAFE.

    Baste with drippings every 30 minutes after the first hour.

    Chicken breasts are great–make tacos from them, or salads. Stir fry with oriental mix veggies. Sautee strips of them with onion, pepper & salsa & serve on soft tortillas for fajitas. Flatten them, then roll up with a yummy stuffing, or spinach & mozzarella.

    There’s hundreds of great soup recipes. Chicken & dumplings, barbecued on buns, salads, cook & chop, mix with spinach & cheese, and fill manicotti (bake in alfredo OR tomato sauce).

    Almost anything made with ground beef can be made with chicken–be creative!

    The easiest you can get is this: marinate chicken with italian salad dressing and a little onion. Next day, just bake or broil the chicken. You exert no extra effort and will eat a delicious chicken. By the way, you can do the same with steaks.

    INGREDIENTS
    2 tablespoons butter
    1 large yellow onion, chopped
    2 cloves garlic, minced
    1 pound boneless chicken thighs
    1 cup low-sodium chicken broth
    1 (10 ounce) package frozen mixed vegetables
    1/2 teaspoon dried sage
    1/2 teaspoon dried thyme
    1 1/2 cups self-rising flour
    3 tablespoons chopped fresh parsley
    3 tablespoons shortening
    2/3 cup buttermilk
    DIRECTIONS
    Melt butter in a large saucepan or pot over medium heat. Saute onion and garlic for 5 minutes, then stir in chicken and saute until browned, about 7 to 10 minutes. Stir in broth, vegetables, sage and thyme; mix all together and let simmer over medium heat while preparing the dumplings.
    In a medium bowl, mix flour and parsley together. Add shortening and stir mixture into a coarse, mealy dough. Stir in buttermilk, a little bit at a time, until dough holds together and is soft but firm. (If needed, add up to 2 tablespoons more buttermilk).
    Bring chicken mixture to a boil over medium high heat and drop round spoonfuls of dumpling mixture on top (do not let dumplings touch each other). Reduce heat to low, cover pot and let simmer for 10 to 12 minutes.

    1/4 cup lime juice
    1/4 cup olive oil
    1 tablespoon garlic, minced
    2 boneless skinless chicken breasts

    1. In a medium bowl, whisk together the lime juice, olive oil, and garlic.
    2. Season with salt and pepper generously, and add chicken, making sure it is well-coated with the marinade. Marinate chicken, covered in fridge for at least 3 hours and preferably overnight. Preheat oven to 400 degrees F.
    3. Remove chicken from marinade and discard marinade. Arrange chicken breasts in a shallow baking pan.
    4. Season with salt and pepper and roast for 25-30 minutes or until chicken is cooked through and the juices run clear when you prick it with a fork.

    You have to prepare everything in advance.
    Chicken w/Rosemary sauce:
    3 Chicken breasts.
    Fresh Mushrooms.
    3 table spoons butter.
    1 teaspoon F.Lemon
    some flour,salt and pepper.

    3 slices of Mozzarella cheese.

    Here’s a pretty easy chicken recipe and it’s good. Use boneless skinless breasts season them however you like. You can marinate them the day before with whatever you like or just season them up right before cooking. I use garlic powder,black pepper, and soul seasoning. Then wrap them in bacon. Bake for about 45 minutes in 400 degree oven or until juices run clear. Then add a slice of colby cheese( you can use any kind of cheese you like). Put bake in oven for a couple more minutes just until the cheese is melted. Serve with a salad and some rice ,or what ever you like.

    Oven Fried Chicken

    Make three “dipping stations”

    Season the chicken with all purpose seasoning.
    Cover in first bowl which you have filled with flour & a little extra seasonings

    Dip in second bowl which contains two eggs beaten.

    Cover in third bowl which has bread crumbs in it!… Italian or whatevr style you like.

    Then fry it in an inch of vegetable oil or simply place it on a cookie sheet in the oven at 350degrees truning after 15 minutes for a total cooking time of 24-30 minutes.

    Also try…

    Take 4 cloves of garlic & mash them (you can use a food processor or a mortar & pestel sorry my spelling sucks)
    add salt, oregano, & a little bit of olive oil..make into a paste

    Rub the paste all over the chicken breasts (you may want to cut soem slits in the chicken to get seasoning inside)

    Put in a baking dish with half a cup of white wine & a tablesppon of lemon juice (this part is optional… I just love how juicey & tasty it comes out) Cover with tin foil…make sure the tin foil has a corner up or a a slit in the middle to let the chicken breath!

    Bake for 15 minutes at 350 degrees…check on it..turn it iff you want and cook for another 15 minutes

    Serve on top of plain pasta or on the side of rice pilaf
