    Tres Tesoros Brownies

    1 stick (4-ounces) butter
    2 ounces unsweetened baking chocolate
    1 cup granulated sugar
    2 large eggs
    1 teaspoon vanilla extract
    3/4 cup all-purpose flour
    1 cup chopped pecans
    1 cup chocolate chips
    1 cup sweetened flaked coconut
    Heat oven to 350 degrees F.
    In a small saucepan (or in medium bowl in microwave) melt butter and chocolate over low heat. Remove from heat and stir in sugar; beat in eggs and vanilla, then stir in flour, nuts, chocolate chips and coconut.
    Spread batter in a lightly greased 8-inch square baking pan; bake for 25 minutes, until brownies begin to pull away from sides of pan and middle has barely set.
    Let cool and cut into squares to serve.

    DOUBLE CHOCOLATE DELIGHT

    2 cups flour
    1/2 tsp salt
    2 eggs
    1 1/4 cup sugar
    1/2 cup shortening
    1/2 cup cocoa
    1 cup dark coffee (hot)
    1 tsp baking soda dissolved in 1/4 cup hot water

    Blend all ingredients and bake at 375 for times listed below

    8 x 9 pan = 30 – 35 minutes
    13 x 9 x 2 pan = 30 – 35 minutes
    8” = 25 – 30 minutes
    9 “ = 20 – 25 minutes
    15 1/2 x 10 1/2 x 1 jelly pan = 15 – 20 minutes
    2 1/2 doz. cupcakes = 18 – 22 minutes

    EGGLESS VANILLA CAKE

    3 c. flour
    2 c. sugar
    2 tsp. baking soda
    Dash salt
    2/3 c. oil
    2 tsp. vanilla
    2 tbsp. vinegar
    2 c. cold water

    Mix well and bake at 350 degrees. In a 9 x 13 inch ungreased pan for 1 hour. (This can be made into a chocolate cake by adding 2 envelopes of Choco-Bake.)

    INGREDIENTS:

    2 1/2 cups all-purpose flour
    2 1/2 teaspoons baking powder
    1/4 teaspoon salt
    1/2 cup sugar 1 cup buttermilk
    2 eggs, beaten
    1/2 cup melted butter or margarine
    1 1/2 cups fresh or frozen blueberries, rinsed
    2 tablespoons all-purpose flour
    Sugar for topping

    PREPARATION:
    Sift flour, baking powder, salt, and 1/2 cup sugar. Add buttermilk, beaten eggs, and melted butter; mix until dry ingredients are just moistened. Mix berries with 2 tablespoons of flour; fold berries into batter. Spoon batter into greased muffin pans, filling each muffin cup about 2/3 full. Sprinkle each with a little sugar. Bake at 400° for 20 to 25 minutes.

    Makes 18 to 24 muffins.

    Chocolate Amaretto Bars

    • 1 cup sugar
    • 2 eggs
    • 1/2 cup flour
    • 1/2 cup butter, melted
    • 1/3 cup cocoa
    • 1 1/4 cup ground almonds
    • 2 Tbl amaretto or 1/2 tsp almond extract

    Preheat oven to 325F and butter an 8” square baking pan. • Beat the butter and sugar in a bowl until creamy. Add the eggs, flour and cocoa and beat until well mixed. Stir in the amaretto and the ground almonds. • Pour into the baking pan and bake for 35-40 minutes. Let cool in pan then cut into bite size squares.

    Coca-Cola Cake

    • 2 cups all-purpose flour
    • 2 cups granulated sugar
    • 2 eggs
    • 3 Tbl cocoa
    • 1 cup butter or margarine
    • 1/2 cup buttermilk
    • 1 cup Coca-Cola®
    • 1 tsp baking soda
    • 1 tsp vanilla extract
    • 1 1/2 cups mini marshmallows

    Preheat oven to 350F. Grease and flour a 9×13” baking pan. • Combine dry ingredients in a bowl. • Heat butter, cocoa and Coca-Cola® to boil and pour over the flour mixture. Mix well. Add eggs, buttermilk, vanilla extract and marshmallows and blend. The batter will be thin with marshmallows floating on top. Bake for 45 minutes.

    Frosting:
    • 1/2 cup butter or margarine
    • 3 Tbl cocoa
    • 6 Tbl Coca-Cola®
    • 1 box confectioners’ sugar
    • 1 tsp vanilla extract

    Boil butter, cocoa and Coca-Cola®. Remove from heat and blend in sugar and vanilla extract. Spread on warm cake.

    This is a great recipe for a moist chocolate slab cake that needs no filling and is quick and easy to make.

    Ingredients:

    225 g/ 8 oz butter

    100g dark chocolate, chopped

    150 ml water

    300 g plain flour

    2 tsp baking powder

    275 g soft brown sugar

    150 ml soured cream

    2 eggs beaten

    Frosting:

    200g dark chocolate

    6 tbsp water

    3 tbsp single cream

    1 tbsp butter, chilled

    * Grease a 13 x 8 inch square cake tin. In a saucepan melt the butter and chocolate with the water over a low heat.

    * Sieve the flour and baking powder into a mixing bowl and stir in the sugar.

    * Pour the hot chocolate liquid into the bowl and then beat well until all of the ingredients are evenly mixed. Stir in the soured cream, followed by the eggs.

    * Pour the mixture into the prepared tin and bake for 40-45 minutes on Gas mark 5.

    * Leave the cake to cool after boling in the pan before turning out onto a wire rack. Leave to cool completely.

    * To make the frosting: melt the chocolate with the water in a saucepan over a low heat, stir in the cream and remove from the heat. Stir in the chilled butter, and then pour the icing over the cake using a spatula to spread evenly.
