What are some really good recipes that use ingredients that you most likely have in your house already?

Like cookies without eggs and other sweets. Just recipes that you don’t have to make a run to the store for an ingredient. If it’s quick and easy that’s even better, but anything will do:)

    There’s sugar cookies without eggs…

    Flour
    1 cup sugar
    1 cup sour milk
    1 teaspoon salt
    1 cup shortening
    1 teaspoon baking soda
    1 teaspoon baking powder
    1 teaspoon vanilla

    Cream together sugar and shortening. Add salt and baking soda to milk and dissolve. Sift two cups flour with baking powder. Add milk mixture alternately with flour mixture. Stir in enough flour to make dough stiff. Turn out onto a well floured surface and knead in flour until dough is not sticky.

    Shape into balls of about a cup of dough. Roll dough to about 3/8″ thickness and cut in desired shapes. Bake at 425°F until edges of cookies begin to brown. Remove from cookie sheet and cool on a clean towel.

    Or Apple chicken quesadillas…

    4 flour tortillas
    1 cup cooked, shredded or chopped, chicken meat
    1/4 lb cheddar or Monterey jack cheese, sliced or grated
    1 apple, sliced
    1/4 cup salsa

    Heat a large skillet on medium high heat. Place one tortilla in the skillet. Flip it a couple of times with a spatula, then let it sit in the pan heating up until air pockets form and parts of the tortilla begin to puff up. Flip it again.

    Place cheese slices on half of the tortilla, at least half an inch from the edge of the tortilla. Add chicken pieces on top of the cheese. Fold the tortilla over like an omelette, and press down on the folded tortilla with the spatula. Lower the heat to medium. At this point, if you have enough room in your skillet, you can add a second tortilla to the pan to begin to heat it up.

    When the cheese inside the quesadilla has melted, remove the quesadilla to a cutting board. Open it wide and layer on apple slices and salsa. Fold the tortilla back again, and cut it into three triangles, as if you were cutting a pie. (You don’t have to cut the quesadilla into triangles, it just makes it easier for kids to eat.)

    Repeat with the remaining tortillas.

    Or potatoes with ham…

    2 eggs, seperated
    2 cups diced cooked ham
    3 cups hot mashed potatoes
    1 cup sour cream

    Beat egg yolks with mashed potatoes, season with salt and pepper to taste and stir in sour cream and ham. Beat egg whites until stiff and fold into potatoes, place in buttered casserole, dot with butter and bake in 350°F oven about half an hour.

    Or applesauce pancakes…

    1 cup flour
    1/4 teaspoon salt
    1 1/2 teaspoons baking powder
    1 tablespoon melted butter
    1/2 cup milk
    1 beaten egg
    1/2 teaspoon vanilla
    2 cups applesauce

    Combine all ingredients in mixing bowl. Mix well.

    Pour onto hot griddle.

    Serve with maple syrup and butter.

    1 golden delicious apple, quartered
    1 pear, quartered
    1 orange, peeled and sectioned
    1/2 red or pink grapefruit, peeled and sectioned
    1/4 cup green seedless grapes

    1 tablespoon honey (optional)
    Champagne, enough to cover individual servings

    Wash fruit, remove peels, cores, seeds, etc. Section citrus. Cut all fruits into bite-sized pieces. Combine all fruits in a small bowl and toss gently with honey (fine turbinado or 10X sugar may also be used).

    Chill for 30 minutes before spooning into decorative individual serving dishes or champagne glasses, filling only half the glass.

    Fill the remainder of the glass with chilled champagne. Pink champagne adds color to the mix, but any champagne will be as festive.

    When serving in champagne glasses, garnish the edge of the glass with a slice of lemon or orange and dip the rim of the glass in colored sugar.

    If serving in bowls, top with a sprig of mint and a dollop of whipped cream.

    2.SNOW BALL ICE CREAM

    5 cups snow or shaved ice
    1 can sweetened condensed milk
    1 teaspoon vanilla (or to taste)

    Add ingredients to bowl. Mix with spatula. When thoroughly combined, serve and enjoy.

    3.BEEF AND POTATO SOUP

    1 lb ground beef/chuck
    7-10 potatoes (peeled and sliced into about 1 inch cubes
    2 cans cream of mushroom soup
    2 cans beef broth
    1 16 oz. sour cream
    1 chopped onion

    Boil potatoes for about 20 minutes or until soft. Meanwhile, brown beef and onions. Drain. Add cream of mushroom soup, broth and heat to boiling. Reduce heat to low/med. Add sour cream. Cover and simmer for 10 minutes. Drain potatoes and add to pot. Let simmer until ready to serve. This makes a very thick soup but it is delicious!

    4.CHOCOLATE CRISPIES

    1/2 cup butter
    1 cup sugar
    2 squares chocolate, melted
    2 eggs
    1/2 cup flour
    1/4 tsp. salt
    3/4 cup chopped nuts
    1/2 tsp. vanilla

    1. Cream the butter and sugar, then add melted chocolate.

    2. Beat in the eggs until thoroughly blended.

    3. Fold in the dry ingredients and the vanilla.

    4. Pour into a 9-inch greased and floured pan, sprinkle top with finely chopped nuts.

    5. Bake in a 325 degree F. oven for 1 hour.

    6. Mark into squares and remove from pan.

    Yield: 1 9-inch cake to be cut in squares.

    5.APPLESAUCE CAKE

    1/2 cup butter
    1 cup sugar
    2 eggs
    1 cup dates, finely chopped
    1 cup raisins (soaked in 2 T. rum)
    1 1/2 cups unsweetened applesauce
    2 cups flour
    1/2 cup chopped walnuts or pecans
    2 tsp baking soda
    1/2 tsp. cinnamon
    1/4 tsp. ground ginger
    1/4 tsp ground cloves

    Preheat oven to 350F degrees.

    In a teacup or small bowl, soak raisins 10-15 minutes in 2 tablespoons rum.

    Cream together butter and sugar, adding sugar gradually until mixture is light and fluffy. Add eggs one at a time, beating well after each addition.

    Stir together raisins, rum from soaking and applesauce; stir gently into mixture.

    On a sheet of wax paper, sift together flour, soda, and spices, mixing well. Fold flour mixture into wet ingredients (first mixture). Stir in chopped nuts.

    Turn batter into a greased and floured loaf pan. Bake in preheated oven for 50-60 minutes or until cake tester (or toothpick) inserted in center comes out clean.

    Note: Craisins or fresh cranberries may be substituted for raisins. (Fresh cranberries do not need to be soaked).

    6.MINT CANDY

    8 oz. mint leaves, crushed
    2 cups boiling water
    2 lbs. sugar
    1 egg white

    In a 1 quart Thermos, add crushed mint leaves.

    Pour over 2 cups boiling water and allow the mint to steep for several hours.

    Strain the leaves and discard, reserving the mint water. Measure out 1 pint of mint water, adding extra water to equal 1 pint, if needed.

    When the liquid has cooled to room temperature, add the beaten white of one egg and 2 lbs. sugar.

    In a heavy bottomed saucepan, boil the mixture slowly until thick, skimming off any foam that rises to the surface.

    Test the candy by dropping a small amount from a spoon into a cup of cold water. When it hardens quickly, it is done.

    Pour onto shallow edged buttered baking sheets.

    Mark off in small squares and set aside to cool.

    When cold, break it up into small pieces and wrap in wax paper. Store in an airtight container.

    Bare Pantry Chocolate Chip Cookie Bars:

    Ingredients
    1 cup baking butter , softened
    1 cup sugar
    1 tablespoon vanilla
    1/2 teaspoon salt
    2 cups flour
    1 (12 ounce) package semi-sweet chocolate chips (1.5 cups for dough, 1/2 cup for topping)

    Directions
    1. Preheat oven to 375°.
    2. Beat butter, sugar, vanilla & salt.
    3. Gradually add flour and continue mixing.
    4. Stir in 1 1/2 cups chocolate morsels.
    5. Press into ungreased 9 x 13 pan.
    6. Bake at 375° for 20-22 minutes until golden on edges.
    7. Cool in pan until slightly warm.

    8. For topping:.
    9. Microwave 1/2 cup of chips in a ziploc bag for 1 minute on HIGH. Watch carefully.
    10. Knead the bag around until the morsels are melted and smooth.
    11. Cut a tip in the corner of the bag and drizzle chocolate onto the bars.

    I loke to make soups cuz you cna use leftovers, and veggies you have in the fridge, pasta or rice in the cupborad, and spices on the shelf that you want/have.
