I’m broke but want to eat healthy meals – good recipes?
Does anyone have any healthy recipes that don’t require expensive ingredients? I want to be healthy but can’t afford much, and I’m sick of doing the same-old “baked chicken with rice and broccoli” dishes. Please help! Thanks 🙂

Black Beans and Rice
2 cans black beans
1 can crushed tomatoes
chopped garlic and onion
cooked rice
salt, pepper, cumin to taste
Saute onion and garlic in Pam. Add beans, tomatoes, spices. Serve over hot rice. This is very cheap and good with hot sauce, low fat cheese and low fat sour cream.

Quiche is a very healthy meal that is quite cost effective
1 small onion finely diced
2 Rashers of bacon
1 large or 2 small Tomatoes thinly sliced
1 Cup of chopped baby Spinach
6-7 eggs
1/2 cup Tasty cheese shredded
Saute the onions and finely cut up bacon in a frying pan on lowish heat for 4-6 mins.
Then spread out into a greased quiche tin.
Spread out and mix in the chopped spinach and season with a very small amount of salt and a good bit of pepper.
Pour over the eggs after they have been well beaten with a fork, making sure that the mixture gets into every nook and cranny of the bacon,onion and spinach.
Lay the thinly sliced tomato on the top, pushing the slices a little way into the egg.Spread the cheese on top.
Cook in a 170Deg oven for 20 mins
Pull out and check with a skewer that the egg mixture is cooked if not pop in for another 5 mins
This will give you 4 servings from a 10inch diameter quiche tin and all up will cost $8 approx or $2 a serve.
The quiche will keep covered in the fridge for 2 days, and is great reheated

I would do a ranch turkey burger (mix turkey, dry powdered ranch dressing) and some roasted peppers. Pan fry the ‘burgers’ in cooking spray. Mix the rest of the roasted peppers with low fat ranch dressing, use to dip in.
Roast some ‘sweet potato fries’. Cut the potatoes like fries, toss with your favorite spices and toss in olive oil. Bake on 425 for 30 minutes.
Serve with a salad and your all set.

Garlic Ranch Chicken [serve 4]
4 skinless, boneless chicken breasts
1 cup fat free ranch dressing
2 tablespoons chopped garlic
1 tablespoon chopped fresh basil
Combine the dressing, garlic and basil in a large resealable plastic bag. Add chicken pieces, turning them to coat. Squeeze out air and seal bag. Place in refrigerator for 1/2 hour.
Preheat grill to medium heat.
Grill chicken breasts for 6 to 8 minutes on each side, turning occasionally, until juices run clear when pierced with a fork.

Saucy Parmesan Chicken [serves 4]
4 small boneless skinless chicken breast halves (1 lb.)
1/4 cup Reduced Fat Dressing
1/4 cup Grated Parmesan Cheese
Place all ingredients in large resealable plastic bag; seal bag. Turn bag over several times to evenly coat chicken with dressing and cheese.
Refrigerate 30 min. to marinate, laying bag flat so chicken pieces do not overlap in bag.
Preheat oven to 425ºF. Remove chicken from marinade; discard bag and marinade. Arrange chicken on foil-covered baking sheet. Bake 20 min. or until cooked through (165ºF).
