Know any good chicken breast recipes?

I just started Weight Watchers diet & bought a bunch of skinless chicken breasts, but havent a clue as to what I can do with them. Any good healthy recipes out there. I’d preferred no frying.

    I cheat- I use canned soup all the time and use 1/3 of the can with water or chicken broth and eat it like that!

    boil them carefully to avoid scrunching up… and cool them …. put them into a plain vinaigrette dressing for 20 minutes or so, put on top of lettuces and pour the vinaigrette over it all… garnish with almond slices …

    1/2 cup mayo/miracle whip
    1/2 cup parmesean cheese
    mix it together and spread over frozen chicken breast, both sides. sprinkle with italian bread crumbs.

    I always like to put it really thick. sounds yucky, but omg good. my sis hates mayo, but absolutely loves this chicken. try it for sure.

    Put between 2 pieces of siran wrap & flatten w/a cooking mallot to make the pieces thin. On top of each breast place some fresh mushroom (sliced), some bacon bits, & some cheese..spice it up w/some salsa too or onions. Wrap that up in the breast & close w/toothpicks. Marinate in some fat free Italian dressing for about 30 minutes and then grill till chicken is done. You can put different things in the middle of the chicken if you want. i sort of made this up myself and it turned out really good! i’m actually going to make it this weekend.

    Garlic Chicken

    Oven 350

    Coating of chicken:
    Bread Crumbs (I use ground up croutons!)
    Parmasean cheese (about 1/4-1/2 cup)
    Parsley flakes
    Garlic powder ( just to season however much you want)

    Butter or Olive Oil. (i perfer OO) enough to dip all your chicken in
    Garlic cloves minced (depending on how much chicken and how much you love garlic)
    Heat the butter or olive oil with the garlic to fuse the flavors. allow to cool slightly.

    dip the chicken into the garlic sauce and coat with the breading mixture. Bake in oven until cooked. Strips take about 20 min or less and breast about 30-35 min.

    suatee 4 oz’s of chicken breast with dry sherry or white wine in place of butter with mushrooms, zuchini and tomatoes and then pour over a half cup of rice or a cup of egg noodles.
    it comes out to about 400 calories. Good luck.

    I’m also watching my weight too, and everyone recommends boneless skinless chicken and turkey, but at first I never knew what to do with them either so I feel your pain. I kind of made up my own recipes that are really easy because I’m not that good of a cook…
    One thing I do like to do is make a marinade and let the chicken soak in it overnight to better absorb the flavors…I once made this tex-mex flavored chicken by making a marinade out of fresh organic salsa (you can find it in the produce section, its kept cold) about a teaspoon of minced garlic, a little bit of olive oil, parsley, and cilantro. I threw all of that together in a ziploc freezer bag, and then I rubbed the chicken breasts with Mrs Dash seasoning (awesome stuff, no sodium either) and some black pepper and then threw the chicken breasts into the bag of marinade, making sure each breast was covered, and let it sit overnight in the fridge. The next day I just pan seared the meat and it was delicious and so juicy. I had leftovers so I sliced the extra and put it on top of some salad greens for lunch the day after!

    They are very good when marinated and baked in either fat-free Italian salad dressing or fat free Ranch dressing.
    They’re also good sprinkled with any of a hundred different spice blends, like lemon pepper, garlic-herb, etc (neither has any calories).
    Marinate in the Italian dressing & skewer with red & green pepper pieces, onion chunks, mushrooms and cherry tomatoes. Put over hot coals for about a half-hour.
    Kabobs are very low cal, low fat, beautiful, and yummy!

    Key West Chicken

    This recipe from the Florida Keys has been given to almost everyone I know. It is the best marinade for chicken, and it only takes 30 minutes from prep till you can grill! It’s a great blend of flavors with honey, soy sauce and lime juice.
    Ingredients
    3 tablespoons Soy sauce
    1 tablespoon Honey
    1 tablespoon Vegetable oil
    1 teaspoon Lime juice
    1 teaspoon Chopped garlic
    4 Skinless, boneless chicken breast halves
    Preparation
    In a shallow medium dish, blend soy sauce, honey, vegetable oil, lime juice and garlic. Place chicken breast halves into the mixture.Marinate in the refrigerator at least 30 minutes.Preheat an outdoor grill for high heat and lightly oil grate. Place marinated chicken on the prepared grill. Cook 6 to 8 minutes on each side, until meat is no longer pink and juices run clear.

    Chicken and Mushroom
    Ingredients:
    1 pound boneless chicken breasts, skinned and cut in strips
    1 (2 1/2 oz.) jar sliced mushrooms, drained
    1/2 cup lite Italian dressing
    1/4 cup chopped onion
    2 tablespoons diet margarine
    1 med. zucchini, sliced
    1 lg. firm tomato, cut into wedges
    6 slices lite pasteurized cheese product, cut into small pieces

    In shallow baking dish, place chicken with mushrooms. Cover with Italian dressing. Marinate for 30 minutes. Drain; reserve marinade. In large skillet, cook onion in margarine until tender. Add chicken and mushrooms. Cook, covered over medium heat until chicken is tender. Add zucchini, tomatoes and reserved marinade. Cook and stir until zucchini is tender.

    Remove from heat. Sprinkle with cheese product. Cover and let stand for 2 minutes or until cheese begins to melt.

    HONEY MUSTARD COATED CHICKEN

    1/4 c. Dijon style mustard
    3 tbsp. honey
    2 tsp. lemon juice
    2/3 c. plain bread crumbs
    1 lb. boneless, skinless chicken breasts or thighs
    1 tbsp. vegetable oil

    Combine mustard, honey and lemon juice in shallow dish or pie plate. Place bread crumbs in another dish or pie plate. Dip chicken pieces in mustard mixture, turning to coat and then in bread crumbs. Place on cookie sheet that has been lightly greased or sprayed with non-stick vegetable oil cooking spray. Drizzle chicken evenly with oil. Bake at 375 degrees for 30 to 35 minutes or until golden brown and cooked through.

    Use the breasts you have and gently poach until nearly cooked and then adapt my recipe to suit.

    Chicken Pie (Lazy Man Version)
    Buy 1 kg at the Supermarket Deli bar Shredded Chicken
    Slice a large onion into rings or crescents and soften in oil in a frypan.
    Sift over some plain white flour and stir over med/low heat for a couple of minutes and stir in some milk until you have a fairly thick sauce.
    Add shredded chicken and combine. Turn off heat and let the sauce cool and the chicken warm.
    In the mean time line a greased pie dish with a sheet of puff pastry.
    Individual oval pie dishes could be used if you have 4 or more.
    Once the chicken mix has cooled 2/3 rds fill the pie dishes.
    Cover with another piece of pastry trim edges and brush with milk. Spear the top with the tip of a knife to create steam vent.
    Place in a preheated oven 160C for 30-40 minutes until the tops are browned nicely.
    Remove and place on a wire rack to cool.

    A teaspoon of curry powder added with the flour would be great.

    I suggest you buy a George foreman grill (you can get a small
    one for under $20.

    When I did WW I was told a recipe to make the chicken breast tender by marinating them in diet cream soda and then
    cooking them in the oven or George Foreman Grill.

    Another thing I did was to cut the chicken breast kind of thin,
    season it, put it on the George foreman grill and right before it
    was ready I placed sliced onions and grilled them also. I then
    sliced it and place it on a bed of salad greens w/ tomatoes and cucumber. (You can look for low calorie marinades
    like Old Cape Cod soy and ginger salad dressing/ or any of the low calorie Lawry’s marinade/ or any fat free salad dressing-balsamic vinegarette.

    INGREDIENTS
    2 teaspoons crushed garlic
    1/4 cup olive oil
    1/4 cup dry bread crumbs
    1/4 cup grated Parmesan cheese
    4 skinless, boneless chicken breast halves

    DIRECTIONS
    Preheat oven to 425 degrees F (220 degrees C).
    Warm the garlic and olive oil to blend the flavors. In a separate dish, combine the bread crumbs and Parmesan cheese. Dip the chicken breasts in the olive oil and garlic mixture, then into the bread crumb mixture. Place in a shallow baking dish.
    Bake in the preheated oven for 30 to 35 minutes, until no longer pink and juices run clear.
