Here’s just the thing. It looks complicate, but it’s easy as porridge to make!

    porridge Tart with Napoli Topping

    60ml (4 tbsp) toasted breadcrumbs
    750ml (3 cups) water
    250ml (1 cup) maize meal
    5ml (1 tsp) salt
    50g butter
    50g grated cheddar cheese
2 extra large or jumbo egg yolks
    2ml (½ tsp) grated nutmeg

    NAPOLI TOPPING

    1 onion, sliced
    olive oil
    250ml (1 cup) tomatoes
    4 large black mushrooms, sliced
    125ml (½ cup) olives, pitted
leaves from a few sprigs of thyme
salt and milled black pepper extra thyme sprigs, for garnishing
Heat the oven to 200ºC. Butter a 22cm quiche tin and sprinkle in half the toasted crumbs.
Bring the water to the boil in a medium saucepan. Tip in the maize meal and salt and stir over high heat for about 5 minutes until the mixture thickens.
Remove from the heat and beat in the butter, cheese, egg yolks and nutmeg.
Spoon the porridge into the prepared quiche tin and sprinkle over the remaining crumbs. Bake for about 40 minutes until crisp and golden.
Napoli Topping While the tart base is baking, lightly brown the onion in a little olive oil in a frying pan.
Add the tomatoes and mushrooms, and season with thyme, salt and pepper.
Cover and steam gently for 4 to 5 minutes until the vegetables are tender.
Spoon the topping onto the warm tart base, scatter the olives on top and garnish with thyme sprigs.
Serve warm or at room temperature with a green salad.
    SERVES 8
