This recipe for cherry tomato and pepperoni pizza is as easy as it gets – truly. Throw a few Italian style ingredients on top of (admittedly not Italian) naan bread and bake it. Simple as. To ring the changes you could use either French bread or any other that takes your fancy.

    Serves 2
    Ready in under 20 minutes

    Ingredients
    2 plain naan breads
290g jar Whole Cherry Tomato & Basil sauce
    150g pack Italian mozzarella
    50g sliced pepperoni
    Handful of fresh basil leaves

Preheat the oven to 200°C/fan180°C/gas 6. Put naan breads on a large baking tray. Divide jar of sauce between them, spreading evenly over each. Top with sliced mozzarella and sliced pepperoni. Season and pop in the oven for 10-12 minutes until piping hot and the cheese is turning golden. Scatter with fresh basil leaves to serve.

Oh and try and stick to the weights, resist the urge to put too much meat on! (i always did that!) makes it too greasy… just a generous handfull spread evenly over the thing! Oh and toss a little red onion on too if it takes your fancy, i love the stuff myself.

    Enjoy!

    Try the following

Chorizo, roasted pepper and feta pizza
250g/9oz self-raising flour, plus extra for dusting
    pinch salt
2 tbsp olive oil, plus extra for brushing
    1-2 tbsp water
    1 sprig thyme, leaves only
1 sprig rosemary, leaves freshly chopped
½ scotch bonnet chilli, finely chopped
    100g/3½oz chorizo, sliced
    50g/2 oz cherry tomatoes, halved
    85g/3oz roasted red peppers, chopped
    handful fresh parsley
    handful fresh basil
    100g/3½oz feta

    Method
    1. Place the flour and salt into a large bowl, add the oil and water and mix together until it forms a dough. Stir in the thyme, rosemary and chilli.
    2. Turn the dough out onto a floured surface and divide into three balls. Roll each ball flat and shape into ovals.
    3. Brush the pizza bases with olive oil, heat a griddle pan until hot, carefully add the pizza bases and griddle on both sides for 3-4 minutes, or until air bubbles appear. Remove from the pan and place on a serving plate.
    4. Heat a frying pan, add the chorizo and pan fry for 3-4 minutes. Add the cherry tomatoes and peppers and fry for five minutes.
    5. Scatter the contents of the pan over the top of the pizza bases, then scatter over the feta.
    6. Use a hand-held blowtorch to slightly melt the feta, or warm under a preheated grill. Serve

or Salami and roasted pepper pizza
    For the base
    150g self-raising flour
    55g/2oz Greek yoghurt
    2 tbsp water
salt and freshly ground black pepper
    For the topping
    4 tbsp tomato purée
handful cherry tomatoes, cut in half
    1 garlic clove, chopped
    1 tbsp olive oil
1 roasted pepper (from jar), chopped
4 cooked baby salami sausages, cut in half lengthways
    55g/2oz halloumil cheese, grated

    Method
    1. Preheat the oven to 220C/425F/Gas 7.
    2. To make the base, mix the flour, yoghurt, water and seasoning together in a bowl to make a dough. Using floured hands, shape the dough into a ball and roll out on a floured surface to form a thin circle.
    3. Place the dough base in a pan and dry-fry for 2-3 minutes on each side, until lightly coloured, then transfer the base onto a baking sheet.
    4. Spread the tomato purée on top of the base and scatter with the cherry tomatoes.
    5. Sprinkle with garlic and drizzle with oil. Arrange the chopped pepper pieces and the salami pieces on top.
    6. Scatter the grated halloumi cheese on top, then place in the oven to bake for 8-10 minutes, until the cheese has melted and is golden.
    7. Remove from the oven and serve

I make the pizza base in the bread machine on the dough setting using this recipe.

    300ml water
    1 tablsespoon olive oil
Three quarters of a teaspoon of salt
2 teaspoons of sugar (white granulated)
450g white strong bread flour – you can get it in the supermarket
    1 packet of dry yeast.

Add the ingredients to the machine in that order ans switch on.

At the end you will have pizza dough. Roll it out on a floured board/worktop.

    For the topping I use

1 tin of chopped tomatoes, drained
a squirt or two of tomato puree
    a slash of olive oil,
    a touch of pepper

add all this to a jug and whizz with a hand blender.

Spread on the base, top with grated cheddar cheese and peperoni slices.

Place on a baking tray and cook, 180c for 25min

    pizza

    Ingredients :
    Makes 12 slices
Preparation time: 2 1/2 hrs (for 2 pizzas of 30cm)

    Ingredients :
    1 1/4 cup warm water
    1 packet yeast
    3 1/2 cups plain flour
    1 teaspoon salt
    1/4 cup olive oil
    1 pinch salt

    Recipe :
Pour the warm water into a bowl, sprinkle the yeast on top and leave for 2 minutes. Add a pinch of salt and cover bowl. Put in a warm place for 5 or 6 minutes, until mixture becomes frothy.
Put flour and salt in a large bowl, make a well in the centre, then pour in the yeast. Add the rest of the water and the oil, then mix until all ingredients are combined.
    Knead until springy and elastic.
Roll the dough into a ball and put in a greased bowl. Cover bowl with clingfilm and leave in a warm place for 2 hours, to rise.

Divide dough into two. Roll out each half onto a floured surface, until you have the desired thickness.
Make sure pizza base is the same thickness all over by pressing with the flat of your hand and mould it into shape.
Pinch up the edges, so the edge of your pizzas will be slightly raised.
Choose a topping (see other recipes) and cook in a moderately hot oven.

    2 large tomatoes, diced
    1 tbls. chopped jalapeno pepper
    4 green onions, chopped
    2 cloves garlic, minced
    2 cups cheddar cheese, shredded
    2 tbls. grated parmesan cheese
    1 avocado, chopped
    1/2 cup sour cream
2 tbls. chopped cilantro, preferably fresh

    Step by Step Procedure

    ——————————————————————————–

Place pizza crust on a greased pizza pan or ungreased pizza stone.
Spoon tomatoes over pizza dough, leaving a 1/2″ border.
Top with jalapenos, garlic and onion.
Sprinkle with cheeses and season with salt and pepper to taste.
Bake in 500 degree oven for 10 to 14 min. until bottom of crust is golden brown.
Top with avocado, a dollop of sour cream and cilantro just before eating.
Serve extra sour cream on the side.
