I am living in an apartment, and I’m getting sick of eating nothing but coffee, soup, and pizza. I could really use some good home cooked recipes. What I look for are cheap, quick, easy, healthy…etc. Thanks!

get yourself some staples:
some good things to have on hand:
rice
beans (lentils are easiest to cook with, other beans if you like)
couscous, or other pasta
spices (cumin, herbs de provence, salt pepper, etc.)
limes (always useful to have on hand, use it in combination with cumin)
garlic
..

Here’s one I used to use quite often. Cheap and easy.
Cook a box of macaroni and cheese following instructions on box. Drain a can of tuna, add that and a can of mushroom soup. Mix and stir all together. That’s it.

Meat of your choice, fixed the way you want it. Add potatoes or rice, & a vegetable & salad to the menu. Lots of choices here.

Spaghetti With Sauce
1 jar spaghetti sauce, your choice
1 lb. ground chuck, optional
onion, chopped (optional)
spaghetti, enough for however many you’re fixing for
Crumble & brown meat in a skillet; drain well. Cook spaghetti as instructed below. While spaghetti is cooking heat the sauce. Pour sauce into a GLASS bowl, add the drained meat mixture, stir, cover with lid (important), place in microwave & heat on high for about 5 minutes. When spaghetti is done & sauce is heated, serve as you like. Great with a salad, garlic bread, & iced tea!

PERFECT PASTA EVERYTIME
1 lb. uncooked spaghetti
1 gal. water, rolling boil
Place spaghetti into a deep pot of boiling, salted water. The salt & excess water help to prevent sticking, & allows the starch to cook off. After adding spaghetti, return the water to a rolling boil (do NOT cover with lid). Boil spaghetti for 2 MINUTES EXACTLY, then cover with lid, & remove pot from fire, let set for 5 MINUTES for el dente (firm) spaghetti. Drain, toss with oil or butter—olive oil is best. Or better yet, instead of coating with oil or butter mix in a LITTLE bit of the sauce, because adding oil may keep the sauce from sticking to the pasta.
The same can be done with any type of pasta. Just adjust cooking & standing time according to size & thickness of pasta being cooked.
NOTE: 1 lb. uncooked spaghetti equals 4 servings, or so they say! It really depends on size of the appetite!
TIPS:
Never add salt to pasta water, because it will make the pasta tough.
When draining pasta in a colander heat the colander with hot water first, because a cold colander will make the pasta stick together.

Take 1/2 cup of cooked brown rice, dump 1/2 cup of Progresso Black Bean Soup or Lentil Soup over the rice and heat in the microwave. When it’s piping hot, put grated sharp cheddar cheese over top, let it melt up, then eat. If you are on a budget, you can get four meals from one can of soup with this “recipe.” And individual portions freeze up perfectly fine. For the rice, you can cook it in the microwave; one cup uncooked brown rice to two cups water.

Vegetable Pie:
2 cups Chopped Zucchini ( 500mL)
1 cup chopped Tomatoes ( 250mL)
1/2 cup chopped Onion ( 125mL)
1/3 cup grated Parmesan Cheese ( 75mL)
11/2 cup Milk (375mL)
3/4 cup Bisquick mix ( 175mL)
3 Eggs
1/2 tsp Salt and 1/4 tsp Pepper ( 2mL & 1mL)
Heat your oven to 400*F ; Grease a large pie plate
Mix first 4 ingredients in plate
Beat remaining ingredients until smooth ( 15 seconds in blender or 1 minute on high with mixer). Pour into plate.
Bake until knife inserted in center comes out clean. About 30 minutes. Cool about 5 min. before cutting.
Hamburger Surprise:
1lb hamburger ( 450g)
2 boxes Kraft dinner
1 can ( any kind of soup)
1 med. onion, chopped
1 cup vegetables ( your choice)
add your own spices.
Cook the hamburger & onion, add the spices together in frying pan. Cook Kraft according to pkg. directions. When Kraft is almost done, add vegetables, when done, drain. Add to hamburger along with soup and heat through..

when i was in college i’d cook one big meal on the weekend an make meals out of it all week……. like i’d make a beef roast then durin week have beef an noodles, hot roast beef sandwich or bbque beef…… did same with pork an chicken….. hope this helps an good luck.

HOT DOGS ALREADY STUFFED WITH HALAPENO CHEESE … BAKED BEANS WITH A TOUCH OF BROWN SUGAR AND CINNAMIN YOU CAN WRAP THE CHICKEN IN CHEESE OR VEGGIES OR BOTH AND PLACE IN BROILER OR COVER AND MICRO….FROZEN BREAD DOUGH CAN BE MADE INTO A HOT POCKET…STEAM A COUPLE OF BIG LEAVES OF CABBAGE WITH FRESH GOUND PEPPER AND BUTTER AD A PORK CHOP …THROW IT IN THE PAN WHILE YOU TAKE A SHOWER ADD A SPRINKLE OF GARLIC SALT.. BOILED SPAGHETTI WITH JARRED SAUCE AND SPRINKLE WITH PARMESAN…
