well i am starting to eat healthy. what are some easy recipes for breakfast or even after school snacks?

    Cheese tortillas (flour tortillas heated a bit in a fry pan and then put shredded cheese inside and heat some more until the cheese melts, or put the tortilla inside the microwave to melt the cheese and then the tortilla gets nice and soft)

    Granola mixed with yogurt and cut up fruit (bananas, apples, raisins, cranraisins, strawberries…any combination)

    1/8 cup (3/4 ounce) cubed part-skim Swiss cheese
    1/8 cup (1/2 ounce) cubed smoked turkey
    1/2 apple, cubed

    If you are looking for something quick and easy, your best bet is to grab a yogurt cup and throw in some fresh fruit. The night before, you can slice up some strawberries, bananas, cherries, and throw some blueberries into a sandwich bag. The next morning, pour them into a bowl and pour a cup of yogurt on top- mix it up and enjoy. This is VERY good for you- it is brain food so it will give your brain a jump start for school and also the yogurt really helps your stomach when it comes to healing problems or speeding up digestion.
    Fruit is also good for after school. What I like to have for snacks are baby carrots or celery, and dip it into a dressing I made from fat free sour cream mixed with some powdered ranch dressing dip mix (found near salad dressings in store, usually on top shelf).
    If you just HAVE to have some carbs, like I do, try dipping some pretzels in mustard, or in the ranch dip we made above. Get the hard sourdough pretzels- they are the best tasting and most satisfying.
    Another great thing to have is hummus- you can buy it premade in the store, and eat it with the raw veggies, or you can cut up some flour tortillas into triangles and put them on a cooking sheet in the oven at about 250 degrees for about 10 minutes- just keep your eye on them so they dont burn. you can touch them and if they are still too soft let them stay in there for another 5 minutes until the get harder.
    lunch meat with a little piece of cheese inside is good to curb your hunger- but be careful because the cheese can be very heavy.
    You could try some whole wheat waffles for breakfast- or turkey bacon. Here in the south we often eat big thick tomato slices for breakfast with a lil salt and pepper on them.

    Smoothie:

    1 banana
    1/2 apple
    1 kiwi, peeled
    1/2 cup frozen berries
    1 cup orange juice
    1/2 cup low fat milk
    1/2 cup low fat yoghurt
    1 Tbsp honey

    Combine ingredients in a blender. Blend until smooth. Can work for both breakfast and/or after school.

    Fresh Fruit: Cut up some apple, banana, pineapple, berries, cucumber etc. and you have a super healthy afternoon snack.

    Toasty Sandwich

    2 slices wheat/wholegrain toast bread
    1/2 red bell pepper, chopped thinly
    1/2 onion, diced
    3-5 small mushrooms, chopped thinly
    A few lettuce leaves
    1/2 ounce fresh cheese, grated
    Pre-cooked shredded chicken
    Rice bran/Canola oil

    Add a tablespoon of rice bran/canola oil to skillet. Add red pepper, onion and mushrooms. Fry until cooked and onions have just turned golden. Toast bread in toaster until golden/lightly toasted. Add lettuce, chicken, onion, pepper and mushrooms to one slice of toast. Add cheese and put other toast slice on top and eat.

    FRUIT FOR THE DAY SMOOTHIE

    1 can of Mandarin Oranges (including syrup)
    2 frozen bananas, peeled & sliced
    2 cups frozen strawberries
    1 1/2 cups milk

    Add all ingredients in the order listed above to the blender. Be sure to hold down the lid and blend on low speed for 30 seconds. Then blend on high speed for 1 minute.

    1 banana
    6 strawberries
    1 c. milk
    3 t. yogurt
    5 scoops of vanilla ice cream
    1 c. cream
    2 t apple juice
    2 t vanilla

    Blend all ingredients and prepare to enter heaven

    1/3 cup of chopped pineapple
    1/3 cup of strawberries (wash & cut off tops)
    1/4 of blueberries
    1/4 of chopped bananas (remove peel)
    2 scoops of frozen yogurt
    5 ice cubes
    a dash of orange juice

    Put all ingredients into blender. Mix until smooth

    BREAKFAST OR SNACK GRANOLA

    5 cups quick cooking oatmeal
    1/2 cup wheat germ
    1 cup non-fat dry milk
    1 cup sesame seeds
    1 1/2-2 cups dried fruit, chopped
    1 cup organic flaked coconut
    1/2 cup chopped walnuts or pecans
    3/4 cup slivered almonds
    1 cup vegetable or peanut oil
    1 cup honey

    For dried fruit, we like a combination of dry apricots, sliced dehydrated bananas, Craisins, raisins, chopped dates, etc. Use what you like best.
    Combine all ingredients in a very large bowl and mix well. Warm the oil slightly and mix with the honey. Stir over the granola all at once and mix well using a large wooden spoon.

    Spread on oiled cookie sheets or roasting pans and bake (in about 3 batches) at 300F for 20 minutes, turning over in pan halfway through the cooking time. Bake until granola is a nice toasty brown.

    Allow to cool thoroughly before storing in airtight containers.

    Note: We sometimes add a teaspoon of pure almond extract or ground cinnamon to the oil/honey as a variation. Half of the oil may be substituted with non-hydrogenated virgin coconut oil (found in health food stores and some supermarkets).
