How much food do I order for a party of 90 people if I have 3 different buffet style menus?
I want a good variety but don’t want to run out of food. We can classify the menus into 3 different categories:
safest = everyone can enjoy
medium = about 75% can enjoy
exotic = about 40-50% can enjoy

When you do catering you make sure that you order 1.5 per person per item do you will need:
safest – 135 pieces
medium – 101 pieces
exotic – 61 pieces
It doesn’t matter what you want to serve but that should cover it. This the formula that was used when purchasing for the catering company that used to work for.

Expand on your question, like what food do you deem safe, exotic and medium? What are most of the people are they of many differant cultures what is the purpose of your event, business pleasure? these things dictate the oucome, you may have some vegetarians, or people who straight up like meat an potatoes, or pasta? Sort of feel out your guests, compliment all foods to one another supply a vast array of beverages and your party will be a success but cater to all not just some. Good Luck to you
