    chicken in skillet, cover with your favorite salsa. cook 40 min lid on, sprinkle with cheddar cheese!!

    I have answered this question so many times, so I will keep recommending my winner. Chicken and Broccoli Pesto..

    4 Chicken breasts, 1 inch cubes or slices
    1 head broccoli, cut into small florets
    1 lb Linguini or Egg Noodles ( I find the egg noodles hold more flavor and produce a dryer more concentrated taste, but its your preference)
    1 Jar Pesto, or homemade (recipe follows)
    3 cloves garlic, finely chopped.
    2-3 Shallots, finely chopped.
    Pine Nuts (roasted or plain)
    Extra Virgin Olive oil (or oil of your preference)

    (this is the recipe I use to make pesto, feel free to use your own)

    Pesto Recipe:
    2-3 Cups fresh basil
    1/2-3/4 cup olive oil
    1/4 cup parmesan cheese
    pinch of salt

    Put everything but the oil in the blender and work it a bit, slowly add the oil until its the consistency you like.

    Steam broccoli until just bright green. About 3-5 minutes. Set aside.

    Heat pan to medium – medium high, add a little oil and lightly brown the garlic and shallots. Add chicken and cook until just about done. Set aside.

    Boil salted water and cook pasta al dente. Drain it and add it to the chicken. (If you dont have a large enough skillet to do that, just put the pasta back in the boiler pot and add everything to that)

    Heat over medium, toss to distribute garlic. Add broccoli and pine nuts. Add pesto sauce and toss. Let it cook up about 3-5 minutes so flavors can settle.

    I serve this dinner with ciabatta bread, toasted in the oven with garlic and parmesan. Enjoy!

    My partner likes it when I make him cherry glazed chicken breasts, smashed potatoes and a veggie.

    Cherry glazed chicken breasts:

    1 can cherry pie filling
    4-6 boneless chicken breasts

    Heat oven to 350 degrees F. Place the chicken breasts in a glass baking pan that has been sprayed with a non-stick cooking spray like Pam. Spoon just enough of the cherry pie filling over the chicken to cover lightly. Place pan into oven and cook for 1 hour and 15 minutes spreading more of the pie filling over the chicken every 15 minutes.

    This is very easy and you get a nice moist chicken breast. This also works for Cornish game hens.

    Beer Battered Chicken

    Put one cup of flour into a mixing bowl. Make a well in the middle. Pour 1 cup of beer into the middle and slowly mix the flour into the beer. Mix until all (or most) of the lumps are out. Cover and sit on counter for an hour. Salt and Pepper the chicken and dip in batter. Fry until medium golden brown… it is the best!

    If you are unable to use beer, try soaking the chicken in buttermilk for an hour. Drain them, salt & pepper… and bake at 350 for 40 minutes or until cooked thoroughly. Really good.

    Grilled chicken wrap… umm umm good.

    spinich wrap
    spread pesto on wrap
    place provolone cheese
    add sliced chicken
    diced red onions
    diced tomatoes
    chopped lettuce
    drained and rinsed black beans
    drizzle some ranch over and wrap it up and eat.. SO Delicious

    Or Lemon Herb chicken…

    In bowl combine
    olive oil
    lemon juice
    salt and pepper
    celantro
    paprika
    basil
    garlic salt
    onion powder

    and grill on grill pan.. flavors are awsome together.. I usually eye ball everything ..

    Chicken Breasts Alfredo
    From Troy Aikman and Emeril Lagasse

    Ingredients

    6 boneless chicken breasts (about 1-1/2 pounds)
    1/2 cup flour
    3 eggs, beaten
    3 tablespoons water
    1/2 cup Romano cheese
    1/4 cup snipped parsley
    1/2 teaspoon salt
    1 cup fine bread crumbs
    3 tablespoons butter or margarine
    2 tablespoons vegetable oil
    Cheese Sauce
    6 slices Mozzarella cheese

    Directions

    1. Coat chicken in flour. Mix eggs, water, Romano cheese, parsley, and salt. Dip chicken in egg mixture; then, into bread crumbs.

    2. Heat butter and oil in large skillet. Cook chicken breasts over medium heat until brown, about 15 minutes. Remove chicken to 11“x7” baking dish.

    3. Heat oven to 425 degrees. Make cheese sauce over chicken. Top each piece with a slice Mozzarella cheese. Bake until cheese melts and chicken is tender, about 8 minutes.

    Cheese Sauce

    Ingredients

    1 cup whipping cream
    1/4 cup water
    1/4 cup butter or margarine
    1/2 cup grated Romano cheese
    1/4 cup snipped parsley

    Directions

    1. Heat cream, water, and butter in a 1-quart saucepan until butter melts. Add cheese; stir over medium heat for 5 minutes. Stir in parsley.
