Has anyone got a recipe for raspberry dumplings?

I’ve just heard on a TV programme that this is a traditional Polish recipe but have no other details. Sounds yummy though so it would be great to try it out.

Peaches and raspberries pair perfectly in individual tarts served right out of the oven.

    Peach Dumplings with Raspberry Sauce

1 Pillsbury® refrigerated pie crust (from 15-oz box), softened as directed on box
1 can (16 oz) peach halves in light syrup, drained, liquid reserved
    1 egg white, slightly beaten
    1 tablespoon sugar
    1/2 cup red raspberry preserves
    1/4 teaspoon almond extract

1 . Heat oven to 425°F. Remove crust from pouch; unroll on work surface. Cut crust into quarters.
2 . Divide peaches evenly onto crust quarters. Brush crust edges lightly with reserved peach liquid. Bring sides of each crust quarter up over peaches; press edges to seal, making 3 seams. Place seam side up in ungreased 8-inch square or 12×8-inch (2-quart) glass baking dish. Brush with egg white; sprinkle with sugar.
3 . Bake 22 to 32 minutes or until golden brown. Immediately remove from baking dish; place in individual dessert dishes.
4 . In 1-quart saucepan, heat preserves and almond extract over low heat, stirring occasionally, until warm. Serve warm dumplings with sauce.

    BLACK RASPBERRY DUMPLINGS

1 qt. fresh or frozen black raspberries (2 bags) or black berries
    1 c. sugar
    1 c. water
    3 tbsp. cornstarch
3 c. prepared baking mix (Bisquick)
    1 c. milk
    1/4 c. sugar

    1. In a large pan (6 quart) combine berries, 1 cup sugar, water and cornstarch.
    2. Stir to blend. Bring to boil, stirring often.

    3. Turn heat to low.

    4. Meanwhile combine baking mix, milk and sugar, mixing until soft dough forms.

    5. Drop by spoonfuls onto boiling berries.

    6. Cook over low heat uncovered 10 minutes.

    7. Cover. Cook 10-15 minutes more or until dumplings are cooked through. (I did mine maybe 20-25 minutes since mine were more of a simmer than boiling.)

    OR….

    Raspberry Dumplings
    2 cups raspberries
    1/2 cup water
    1/2 cup honey
    3 teaspoons cornstarch
    1/4 cup water
    1 1/2 cups all-purpose flour
    1 tablespoon baking powder
    Pinch of salt
    3/4 cup milk
    Pinch of nutmeg

Simmer raspberries with water and honey for about 5 minutes. Mix cornstarch with water. Add to raspberries, and thicken over low heat. Set aside and make dumplings.

Mix flour, baking powder and salt. Stir in milk and nutmeg. Drop by spoonful into a large pot of simmering water. Cover and cook for 10 minutes.

Remove dumplings from water with a slotted spoon; drain well and place into dessert dishes. Smother with the prepared raspberries and top with fresh cream, if you like. These are good served warm or cold.

    G’day Hotpink555,

    Thank you for your question.

Raspberry Dumplings are made out of puff pastry and raspberry jam, which are combined into dumplings. After being boiled for an hour, the dumplings are covered with grated sugar and served with melted butter.

    The recipe is:

    2 quarts raspberries
    1 cup sugar
    1 batch dumpling dough

Heat in large pan raspberries and sugar until bubbly and syrupy. Drop in dumplings by the tablespoon and cook 10 minutes uncovered and 10 minutes covered, stirring occassionally.

    Dumpling Dough
    3 Tablespoons shortening
    1 1/2 cups flour
    2 teaspoons baking powder
    3/4 teaspoon salt
    3/4 cup milk

Cut shortening into flour, baking powder and salt until mixture resembles fine crumbs. Stir in milk. Drop into berries. Makes about 10 dumplings.

I have attached sources for your reference.

    Regards
