Well, I will give you mine…my family swears its the best in the world 🙂
First thing to do is bring to boil then simmer the Gizzards, neck, heart and only if you like it, the liver, in enough water to cover.
INGREDIENTS:
3/4 cup chopped onions
1 1/2 cup chopped celery
1/2 cup butter
6 cups bread cubes, I like the herbed ones in a bag.
2 cups of bread dressing, that’s the one that looks like smashed bread cubes:-)
1 or 2 loaf (loaves) wheat bread torn into bite size pieces (this makes it more moist) If you don’t want it to moist add 2 more cups of bread cubes or dressing
1 1/2 teaspoon pepper
2 eggs, beaten
1/2 teaspoon salt
1/4 to 1/2 teaspoon ground sage
1 to 2 teaspoon poultry seasoning, I use 2
1 can chicken broth, start with the liquid from the neck and gizzard
PREPARATION:
Saute onion and celery in the butter until softened.
Dice up the gizzard and heart, Save the neck meat for the gravy! drop me a line if you want that recipe too 🙂
Combine meat, onion mixture with bread, pepper, eggs, salt, sage and poultry seasoning in a large mixing bowl.
Stir in broth until well moistened.
Enough for an 20 to 22 pound turkey. And any left over just put in baking dish and cover with foil. Bake at 350 for 45 min.s, take foil off for 10 more min.s to brown
