What should I cook tonight? Post your favourite chicken recipes.?
Hi, I’d like to make a new chicken dish, preferably something stir-fried or grilled with lots of flavour, Asian or Indian would be good or just anything with a nice sauce, I’d rather not roast anything. What are your favourites that you’ve tried and tested?
If the recipe is long then PLEASE just post a link to where it’s hosted, because I don’t like scrolling through questions with whole recipes posted – it’s difficult.
Thanks!

Chicken Parmesan
Ingredients:
* 4 boneless chicken breasts, pounded to 1/2 inch thickness
* 1 egg
* 1/2 cup milk
* seasoned bread crumbs
* 2 to 3 tablespoons olive oil
* 8 slices mozzarella cheese, or more
* 1 jar (16 oz) spaghetti sauce
* Parmesan cheese
Preparation:
Whisk together the egg and milk. Dip the chicken breasts in milk and egg mixture and then in bread crumbs. Heat olive oil in a large skillet over medium-high heat. Brown the chicken in the hot oil on both sides until golden, about 3 to 4 minutes on each side. Set chicken in a baking dish.
Slice 8 pieces of mozzarella cheese and put two on each chicken breast. Pour 1 jar of your favorite spaghetti sauce over all. Sprinkle with Parmesan cheese and a little more mozzarella and bake at 350° for about 25 to 30 minutes, or until bubbly.

LOVE this Salt and Pepper Chicken recipe, http://frigidaire.stores.yahoo.net/salt-and-pepper-grinders.html At first, I didn’t think how tasty a salt and pepper rub would work on any meat, let alone chicken, but it is fantastic. When I first found the recipe, there were times that I made it twice a week! 🙂 Awesome, awesome recipe. It’s simply and easy to prepare too!
Hope this helps and happy cooking!

How about trying ‘Grilled Asian Chicken’
Here’s the Recipe:
INGREDIENTS
* 1/4 cup soy sauce
* 4 teaspoons sesame oil
* 2 tablespoons honey
* 3 slices fresh ginger root
* 2 cloves garlic, crushed
* 4 skinless, boneless chicken breast halves
DIRECTIONS
1. In a small microwave-safe bowl, combine the soy sauce, oil, honey, ginger root, and garlic. Heat in microwave on medium for 1 minute, then stir. Heat again for 30 seconds, watching closely to prevent boiling.
2. Place chicken breasts in a shallow dish. Pour soy sauce mixture over, and set aside to marinate for 15 minutes.
3. Preheat a grill for medium-high heat. Drain marinade from chicken into a small saucepan. Bring to a boil, and simmer over medium heat for 5 minutes. Set aside for basting.
4. Lightly oil the grill grate. Cook chicken on the prepared grill 6 to 8 minutes per side, or until juices run clear. Baste frequently with remaining marinade. Chicken will turn a beautiful golden brown.
