Where can I find some savory vegetarian recipes to add to my Thanksgiving dinner?

I’m looking to add some good vegetarian dishes to my Thanksgiving dinner this year. Simple enough for me to find the ingredients at my local chain grocery store, but a little more than just basic. Any suggestions will be greatly appreciated! Thanks!
I will be roasting a turkey, but it would be great to have at least one substantial dish that was vegetarian – I dont want to just offer sides to my vegetarian family members, I want them to have a full meal. Thanks!

    my gran used to make green beans. boil up beans till tender, drain, set aside. then by taking those little red new potatoes (the tiny 1inch size ball ones) and she’d leave the skin on, but wash them well.. and boil them for a few min (like 10min) then drain. she’d take a chopped onion and saute the onion in a little oil then toss in the potatoes and saute them until they start getting a bit brown on the edge.. then toss in the drained green beans.. add some salt and pepper..

    another was to take a two large cans of yams (like sweet potatoes), add a dash of butter (not sure if vegetarians use butter, but you can substitue what you like).. then add a tablespoon brown sugar or maple syrup. stir well.. then place in casserolle dish. top with a couple handfuls of marshmallows. (yes marshmallows) place in oven and heat on 350F.. till heated through and marshmallows brown.. this is an alltime old fav or ours

    Thanks for realising vegetarians don’t want to be fobbed off with side dishes.

    Have a look at these recipes; we don’t have Thanksgiving where I live, but I’ve made the creamy mushroom puff and the cashew nut roast with sage and onion stuffing at Christmas before and both were really tasty

    Vegetarian Collard Greens Stew
    by Nobantu Ankoanda
    Ingredients
    12 small bunches of Organic Collard Greens
    2 Heads of Cabbage*
    3 Stalks Celery
    1 Red Bell Pepper**
    1 Green Bell Pepper**
    1 Large Red Onion**
    1 Large Sweet Onion
    6-7 Cloves of Garlic**
    20 sliced Mushrooms
    3 Large Tomatoes (cut up in quarters)
    ¼ cup Balsamic Vinegar
    ¼ cup Molasses
    1 cup Extra Virgin Olive Oil
    5-8 Japanese Dry Red Peppers
    Seasonings
    Salt
    “Spike” seasoning or Seasoned Salt of Choice Pinch of Jamaican Jerk**
    *optional, can substitute with other types of greens

    Directions:

    Wash Greens and roll 4-6 leaves at a time and slice diagonal across, ¼ inches Boil 3-4 cups of water in large pot, when water is boiling drop in collard greens, steam for 20 minutes, then add cut up cabbage Add Balsamic vinegar and ½ cup of olive oil Sautee onions, celery, bell peppers, garlic, tomatoes, mushrooms in olive oil in the Wok Sprinkle seasoned salt over the vegetables and stir Add to steamed greens and cabbage. Stir. Add water if too thick.

    Add molasses, stir
    Add pinch of jerk
    Cook on low heat with top over pot for one hour
    **optional ingredients

    Oops! Thanksgiving day is here and shortly to pass in just a few hours. Use Google or modify your favorite recipes. Simply substitute non-meat alternatives such as tofu, seitan, tempeh, TVP, Quorn, or omit the non-human animal ingredient altogether! 🙂
