Bake and add some low fat cottage cheese. Or peel and cut into chunks, toss in some olive oil and maybe some Rosemary or other herbs you like and bake in the oven.

potatoes aren’t the best for you… they have a lot of starch and my mom says they don’t really count as a vegetable… but i don’t know…

Potatoes are very versatile – you can cut them into chunks, toss with a small amount of olive oil and rosemary and bake them, you can chunk them and stir-fry them. Mashed potatoes are easy – use low-sodium broth instead of milk, and limit the butter (or better yet – use Yukon gold potatoes – they taste buttery). Potatoes are good in curries, or just plain old baked potatoes are good. Vary your toppings – I’ve used salsa, low-fat chili, marinara sauce, and of course, the old standard of sour cream (fat-free) and chives. Anything you could put on noodles, you can serve over a potato.
The other poster is right, though – potatoes are not the best for you in quantity. Try adding other vegetables to the potatoes, to get accustomed to eating them. Also, sweet potates are VERY nutritious, and can be baked or mashed just like white potatoes.

Here is an easy but tasty recipe: scrub one or two potatos, peel if desired and slice into french fry size pieces (thick or thin, your choice). Rinse starch off potatos, pat dry with paper towel and place in a bowl. Add one to tablespoons oil (olive oil or vegetable oil is fine) along with a dash of salt, pepper and seasonings of your choice (I like garlic powder or onion powder but you can use cayenne pepper, oregano, etc.). Toss until well coated. Place on ungreased cookie sheet and bake at 375 degrees F until golden brown (about 20 minutes depending on size and number of pieces), turn once or twice to brown all sides.
