I like to buy a whole chicken, remove all fat, and quarter it. Then I put it on the grill with an olive oil/basil marinade. Last, I immediately serve it with mango salsa. It’s delicious!

4 boneless skinless chicken breast halves (about 1.25 lbs.)

1 egg, well beaten with 1 t. water

3/4 C. Italian seasoned dry bread crumbs

1 26-oz. jar favorite pasta sauce

    4 oz. shredded mozzarella cheese

Heat oven to 400° F. Place chicken on clean cutting board. With meat pounder or edge of saucer, flatten chicken slightly. Dip chicken in egg, then in bread crumbs. Arrange chicken in 9 x 13-inch baking dish. Bake, uncovered, about 20 – 25 minutes.

Pour pasta sauce over chicken and top with cheese. Bake additional 15 minutes or until chicken is no longer pink and juices run clean. Serve with hot cooked pasta.

sometimes I skip the egg and bread crumbs, just cover the chicken with sauce and cheese, bake at 400 for about 45 mins.

    Chicken-Macaroni Casserole

1 1/2 cups uncooked elbow macaroni (about 5 ozs)
1 cup shredded cheddar cheese (about 4 ozs)
1 1/2 cups diced cooked chicken (or turkey)
1 can mushroom stems (optional) (4 ozs)
    1/4 cup chopped pimiento
1 can (10 1/2 ozs) condensed cream of chicken soup
    1 cup milk
    1/2 tespoon salt
    1/2 teaspoon curry powder

    Heat oven to 350 degrees

    Stir together all ingredients
Pour into ungreased 1 1/2 quart casserole dish
    Cover
    Bake 1 hour

I do not always use the curry powder as I don’t care for it and a lot of people don’t like curry. Most people do llike mushrooms and it will add a nice flavor, though I don’t care for them either. But it is good with this dish.

    Enjoy!!

this is the bomb!!!, buy boneless skinless chicken breast and cut them into tenders ( or you can buy them precut, but the more the butcher works the more it costs) one bottle of Italian Dressing (I like Kraft) Marinade the chicken in the Italian dressing for at least an hour. Season with Mrs Dash Original or Chicken Blend and the grill on gas grill or in a George Foreman type grilling machine. It is Awesome

    Aloha Chicken
The recipe lists chicken thighs, but you can use any bone-in chicken pieces you like. You have got to taste this dish to believe it! It’s my personal favorite, and I don’t even like chicken! I know it doesn’t sound too great, but you owe it to yourself to taste this tangy-sweet pineapple-chicken dish. Serve over cooked white rice if desired. (Note: You can vary the amount of chicken to taste. The less you use, the stronger the flavor).”
    Original recipe yield: 8 servings.
    Prep Time:20 MinutesCook Time:1 Hour Ready In:1 Hour 20 MinutesServings:8 (change)

    ——————————————————————————–

    INGREDIENTS:
    4 pounds chicken thighs
    1 teaspoon ground ginger
    1 teaspoon paprika
    1 tablespoon onion powder
    2 tablespoons garlic salt
    3 tablespoons cider vinegar
    1 cup ketchup
    1/4 cup soy sauce
1 (20 ounce) can crushed pineapple with juice
    1/4 cup packed brown sugar

    ——————————————————————————–

    DIRECTIONS:
    Preheat oven to 400 degrees F (200 degrees C).
Arrange chicken pieces in a single layer in a well greased 9×13 inch baking dish. In a small bowl mix together the ginger, paprika, onion powder and garlic salt. Add the vinegar and mix well. Divide this mixture. Brush 1/2 over the chicken pieces and bake in the preheated oven for 15 minutes.
Turn the chicken pieces, baste with the remaining 1/2 of the vinegar mixture and bake for 15 minutes longer. Meanwhile, in a medium bowl combine the ketchup, soy sauce, pineapple and brown sugar. When chicken baking time is up, spoon the pineapple/soy mixture over the chicken. Bake for another 30 minutes. Serve while still hot.
