Quick & healthy george foreman chicken recipes?

Im trying to cut back on rice from twice/day to once(i’m hispanic so it’s hard). I need some healthy&quick george foreman recipes to take for lunch. I like salads&healthy alternatives to rice. Just got a grill for xmas but i dont have a manual.

    Very easy very VERY tasty chicken recipe for a Foreman grill:

    Boneless skinless chicken breasts: pop them on the grill, spray with lemon juice, sprinkle with pepper. Lower the top grill, cook for about 4 or 5 minutes. Done.

    You can vary that recipe by using different spices every time. Jamaican Jerk works well. Or Sazon Goya, or Triguisar, or Mojito, or whatever you would like to accommodate your particular individual latin taste.

    ~~~~~ Chiang Mai Chicken ~~~~~
    This chicken dish has a great flavor of fresh ginger and the subtle spice of Tabasco. It does not require much cooking time and the result is delicious.
    Serving: 4 / Prep: 25 min / Cook: 25 min

    2 tbsp vegetable oil
    4 large boneless, skinless chicken breast halves, cut into bite-size pieces
    1 medium red bell pepper, cored, seeded and cut into thin strips
    1 tbsp minced fresh ginger
    1 large garlic clove, minced
    1/2 cup coconut milk
    2 cup chicken broth or water
    1/2 tsp Tabasco Brand Pepper Sauce
    1 tsp salt
    1 tbsp fresh chopped parsley or cilantro

    1. Heat oil in 12-inch skillet over medium-high heat. Add chicken. Cook until well browned on all sides, stirring constantly. Remove chicken with slotted spoon and place on a plate.

    2. Cook pepper strips, ginger and garlic in remaining tablespoon oil over medium heat for about 3 minutes.

    3. Return chicken to skillet; add coconut milk, chicken broth, Tabasco Sauce and salt. Bring to boil over high heat. Reduce heat to low; cover and simmer 10 minutes to blend flavors, stirring occasionally.

    4. Sprinkle parsley on top before serving.

    ~~~~~ Rosemary Lemon Pepper Chicken ~~~~~
    Simply elegant! Enjoy this main dish with a side salad of greens.
    Serving: 2
    Prep: 10 min / Cook: 20 min

    3 lemons
    2 tbsp chopped fresh rosemary
    2 tsp olive oil
    1/2 tsp salt
    1/2 tsp pepper, coarsely ground
    1 minced clove garlic
    2 boneless skinless whole chicken breasts

    1. Using a grater, grate the peel from one lemon and reserve in a small bowl. Slice all of the lemons in half.

    2. Thinly slice one of the halves and set aside.

    3. Squeeze all of the juice from the remaining lemons into the bowl with the lemon peel. Remove any seeds that may have fallen into the juice.

    4. Add the rosemary, olive oil, salt, pepper, and garlic. Mix well.

    5. Liberally spray a medium heavy skillet with cooking spray. Over medium high heat lightly brown the chicken on each side.

    6. Add the lemon juice mixture to the pan and continue to cook for 5 minutes. Flip the chicken over and continue to cook until the chicken is thoroughly cooked (when the juices run clear when pierced and the flesh is no longer pink in the thickest part of the chicken breast).

    7. Toss the lemon slices into the pan and cook for a minute more. Serve hot.

    ~~~~~ Chicken and Pasta Sauce ~~~~~
    You’ll love how easily this dish comes together, while your family will simply love eating it! For a cheesy version, put shredded or thin-sliced mozzarella on top before baking, or just pass some grated Parmesan at the table.

    Servings: 4 to 6
    Ingredients:
    1 (3-pound) chicken, skinned and all visible fat removed
    1 (28-ounce) jar pasta sauce of your favorite variety
    1 small onion, leek or medium shallot, finely chopped
    1 (6-ounce) can sliced mushrooms, drained
    Chopped scallions or parsley, for garnish (optional)
    Cooked, buttered pasta, for serving (optional)
    Cooked asparagus spears, for serving (optional)

    In a large ovenproof dish, add the chicken, pour on the sauce, stir in the onions and mushrooms, cover lightly with foil and bake for 1 hour at 350 degrees F. It’s as easy as that!
    To garnish, sprinkle on chopped scallions or fresh chopped parsley and serve with buttered pasta and asparagus spears.

    Spicy tip: To give the dish a kick, sprinkle on some red pepper flakes. Other additions can be sliced olives, capers, shredded carrots, diced lean ham, low-fat hot dog slices or sprinkles of herbs such as fennel, basil or oregano mixed in.

    ~~~~~ Chicken Almond Casserole ~~~~~

    This casserole is really great. The almonds add a delicious crunch and texture to the dish.
    Serving: 4 / Prep: 25 min / Cook: 45 min

    1 cup uncooked long grain rice
    1 broiler-fryer chicken, cut up (3 1/2 pounds)
    1 10 3/4-ounce can condensed cream of mushroom soup, undiluted
    1 cup milk
    1 celery rib, chopped
    1/2 cup chopped onion
    2 tbsp minced fresh parsley
    1/4 tsp salt
    1/4 tsp pepper
    1/2 cup slivered almonds, divided

    1. Place the rice in a greased 13-inch x 9-inch x 2-inch baking dish; top with chicken.

    2. In a bowl, combine soup, milk, celery, onion, parsley, salt, pepper, and 1/4 cup of almonds. Pour over chicken.

    3. Cover and bake at 350º F for 45 minutes, or until meat juices run clear.
