What is the best light, fluffy vanilla cupcake icing recipe?
I’m baking cupcakes for a child’s birthday party and I need a recipe for icing that I can pipe onto them. Something sort of like the type of frosting they use on the Tres Leches cake. Or any light fluffy icing that would work. Any suggestions?

Buttercream!
Ingredients:
* 1/2 cup solid vegetable shortening
* 1/2 cup (1 stick) butter or margarine softened
* 1 teaspoon clear vanilla extract
* 4 cups sifted confectioners’ sugar (approximately 1 lb.)
* 2 tablespoons milk
Makes: About 3 cups of icing.
In large bowl, cream shortening and butter with electric mixer. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add milk and beat at medium speed until light and fluffy. Keep bowl covered with a damp cloth until ready to use.

Duncan Hines whipped cream cheese frosting is so delicious on everything from carrot cake to double fudge cake. It isn’t overly sweet and it’s light and airy.

Fluffy white icing….
2 large egg whites
1 cup sugar
1/4 teaspoon cream of tartar
1/3 cup water
1/8 teaspoon salt
1 teaspoon vanilla extract
Place the 2 egg whites in a large mixing bowl or the bowl of your stand mixer. Beat until the egg whites are foamy and thick; they should mound in the bowl, without holding a peak. Set them aside while you prepare the sugar syrup….
Combine the sugar, cream of tartar, water, and salt in a saucepan. Bring to a boil, stirring frequently; the sugar should be dissolved. If the sugar hasn’t dissolved, cook and stir a bit more, until it has.
Begin to beat the egg whites, and immediately pour the boiling sugar syrup into the egg whites in a slow stream, beating all the while. As you beat, the mixture will thicken…
Once all the syrup is added, stir in the vanilla, and continue to beat till the frosting is thick and will hold a peak…
Spoon the hot frosting atop the cooled cupcakes, swirling it decoratively.
Decorate while warm with sprinkles, mini chocolate chips, sparkling sugar, or the decorations of your choice, if desired….
