Do you have a recipe for mackerel with bacon, horseradish and watercress?

I used to have a recipe for mackerel stuffed with horseradish and watercress and wrapped with bacon. I’ve lost it and don’t know where it came from originally! Does anyone have this recipe? Or alternitively, if I just try to make it up can you recommend how I should cook it (how long/what temp/bake or grill etc)? Thank you! L

    Mackerel Baked With Sage And Bacon

    Ingredients
    2 mackerel, cut into 8 fillets and pinboned
    8 slices of rindless unsmoked streaky bacon
    16 fresh sage leaves
    1 tbsp olive oil
    Instructions
    Preheat the oven to 220°C, gas mark 7. Place the fish on a baking tray, skin-side up. Season with salt and pepper and brush with a little olive oil. Plaster 2 sage leaves onto each fillet, then wrap bacon around it. A sage leaf should protrude from each side of the bacon. Bake for 15 minutes till the skin and bacon are crisp. This is delicious with spinach and mashed potato.

    Anything bar Horseradish. Somebody is pulling yer plonker.

    I would not go for Gooseberry Sauce either.

    Smoked mackeral like any smoked fish goes wonderfully well with horseradish. If its unsmoked I think it goes equally well, mackeral being such an oily fish the horseradish would match it perfectly.

    I have never seen this recipe, but I would recommend doing the following:
    For smoked mackeral fillets, perhaps serve on a bed of watercress with a dollop of horseradish and crispy grilled bacon crumbled over the top of it.

    For unsmoked mackeral, spread horseradish inside the cavity and stuff with watercress. Wrap whole fish in slices of streaky bacon.

    Now I think you could either bake or pan fry this. To pan fry, heat some olive oil and a little butter in a pan, over a medium heat fry the fish until the bacon is cooked – all nice and brown and crispy. By this time the fish inside should be cooked.

    To oven bake I suggest the same. By the time the bacon is crispy the fish inside should be perfect.
