Does anyone have some good chicken recipes?

I need some good recipes that are low-cal, low-fat, and low-carb. Any ideas? We’ve been reinventing shake and bake for the last few days. We did it where you coat the chicken in the sauce then the shake and bake and then bake it. (That turned out really well with honey mustard.) Thanks in advance 🙂

    Try to look up some on allrecipes.com..they’ve got some yummy ones..and your able to search for recipes that are specifically low fat or low cal by using the search engine.

    you could stuff a chichen fillet with salmon and poach it thin slice it and serve it on a green salad and drizzle it with balsamic reduction (boil balsamic vinegar until it thickens)

    cut chicken into small little chunks, cut bacon into little pieces, both cjick and bacon need to be raw, then use kikoman teriaky marinara powder, and set over nite in fridge, then back in oven till chicken is done, bout 45 minutes or so. its the best

    Stuffed chicken with mushrooms, cheese and rice.

    Boil the chicken (breast) then debone it and let it cool. While it’s cooling, prepare some white rice (about 1 cup) to taste then mix in the mushrooms (and anything else you want).

    When both are ready, cut the chicken along the long edge of the breast but not all the way through. Place the rice and mushroom mixture between the folds and place in a pre-heated oven (350) for about 30 minutes or until the top of the breast is beginning to turn brown.

    take out of the oven and place a spoonful of picante over the chicken and a slice of pepperjack chees over the top. return to the oven for about 5 minutes then serve with veggies or a salad (ceasar).

    VERY low cal and yummy.

    EASY EASY BAKED PEPPER CHICKEN

    6 uncooked chicken breasts
    2 cups onions and peppers (thinly sliced)
    2 tsp pepper
    2 tsp basil seasoning
    1/4 cup olive oil, separated in 1/8 cups

    Preheat the oven to 350 degrees. Line a deep baking pan (9×13) with foil (this will reduce clean-up time) and seal the heat. Drizzle the foil layer with olive oil to avoid sticking Sprinkle foil with some of the pepper and basil Lay the chicken breasts on the oil-seasoning mixture, spread out, and drizzle lightly with olive oil. Use a brush or spoon to distribute the oil evenly on top of the chicken Sprinkle the chicken with remaining seasoning, to taste Sprinkle the chicken with the onions and peppers.
    Important: Cover the pan with another layer of foil, and seal the sides. Bake for 30-45 minutes, or until the center of the chicken is no longer pink.

    It’ll be the juiciest, most tender baked chicken you’ve ever had – no need for a knife. Best over rice and sauteed vegetables.

    PEACHY OVEN BAKED CHICKEN AND BISCUITS

    1/4 c. shortening
    1/4 c. butter

    Place in 9×13 inch pan. Melt in oven.

    1 fryer chicken, cut up, wash thoroughly, pat dry with paper towel
    1 c. flour
    2 tsp. salt
    1/4 tsp. pepper
    2 tsp. paprika

    Mix flour, salt, pepper, and paprika in a paper bag. Shake 3 or 4 pieces chicken at a time, to coat completely. Place, skin side down, in single layer in baking pan. Bake 45 minutes, then turn over. Bake 15 minutes.
    Meanwhile, drain 1 large can of peach halves; place a whole clove in each. Set aside.

    BISCUITS:

    2 1/4 c. Bisquick baking mix
    2/3 c. milk

    Mix until dough forms; beat 30 seconds.
    When chicken has baked a total of 1 hour, push to one end of pan. Drop biscuits on other end. Place peach halves on top of chicken. Bake another 15 minutes or until biscuits are browned.

    4 bone-in skinless chicken breasts, or try boneless
    2/3 cup Extra virgin olive oil
    2 tablespoons mixed italian seasonings
    1/4 cup lemon juice
    sea salt, to taste

    Fully grill the chicken without adding anything to it, it will turn out dry, but that’s all right.
    While the chcken is grilling mix together the rest fo the ingrediants in a blender or food processor. Pour it into a large, shallow bowl.
    As you take the chicken off the grill submerge it into the oil/lemon mixture and cover with foil for a about 2 minutes. It will soak up all of the flavors and become juicy and flavorful.
