    Ingredients
    250g/9oz macaroni
    40g/1½oz butter
    40g/1½ plain flour
    600ml/1pint 1½fl oz milk
    250g/9oz grated cheddar
    50g/2oz grated Parmesan

    Method
    1. Cook the macaroni in a large saucepan of boiling salted water for 8-10 minutes; drain well and set aside.
    2. Melt the butter over a medium heat in a saucepan slightly larger than that used for the macaroni. Add the flour and stir to form a roux, cooking for a few minutes.
    3. Gradually whisk in the milk, a little at a time. Cook for 10-15 minutes to a thickened and smooth sauce.
    4. Meanwhile, preheat the grill to hot.
    5. Remove the sauce from the hob, add 175g/6oz of the cheese and stir until the cheese is well combined and melted.
    6. Add the macaroni to the sauce and mix well. Transfer to a deep suitably-sized ovenproof dish.
    7. Sprinkle over the remaining cheddar and the Parmesan and place the dish under the hot grill. Cook until the cheese is browned and bubbling. Serve straightaway.

i suggest rice and beef porcupines ( meatballs)
    All you need is;
    Meatballs:
500g Mince, 1 onion, 1 carrot grated, some mixed herbs, garlic, 1 cup uncooked rice, salt and pepper
    SAUCE:
tin of tomato soup, Tin of water

    Mash pototo to serve

Mix all the meatball ingredients together like you would for hamburgers and form into small meatballs and cook in a little oil until brown ( doesn’t have to be fully cooked through at this stage). I suggest cooking the meatballs in small batches as it prevents them breaking. Once all are brown. Take all meat balls out of pan. Drain of excess oil. Add the tin of soup and tin of water to the pan, mix together. Add the meatballs bring to boil reduce heat to simmer and cook for half an hour. the sauce should just coat the meatballs and not be runny
In the meantime make your potatoes.
This is a really easy recipe and very yummy my whole family just loves it.
    I hope this helps.

One of the easiest (and most fun) recipes I know is just basic Mexican food. The main idea is to brown some ground beef with garlic and chili powder. Sprinkle the spices evenly over the beef as it cooks.

To go with that, cut up some lettuce, tomato, and onion. Use some grated cheese, and sour cream, salsa, or another sauce of your choosing. Serve it all in a tortilla for burritos or soft tacos, taco shells, tostada shells, or make it into a taco salad. Experiment with it! Mix and match to find out your favorite combinations.

    Mac & Cheese Casserole

Prepare a box of Mac & Cheese according to directions. Add a can of condensed Cream of Mushroom Soup, a can (or two) of tuna (which has been drained of its liquid), 1/2 cup of milk, 2-3 cups of cooked mixed veggies (i.e. peas/carrots or peas/carrots/corn/green beans) and a finely chopped cooking onion (or 2 if they’re as small as a golf ball). Mix them all together and put in a casserole dish. Cover and bake at 350 degrees F. for 1/2 hour.

    Chili
In a frying pan, with about a tablespoon of oil, gently fry until soft, one large (or two small) diced green peppers and 2 cooking onions. Drain and add to your large pot or slow cooker. (If you do these the night before, you can save time.)
Brown one pound of ground beef or ground turkey then drain the fat and put the meat in a large pot or slow cooker (you can prepare the meat the night before and then just put everything in the slow cooker in the morning) OR you can use a one pound package of soy ground round (no need to brown this, just put it in your large pot).
To the pot add a large (28 ounce) can of diced or crushed tomatoes, one can of condensed tomato soup, one small (4 oz.) can of tomato paste, 2 tablespoons chili powder, 1 teaspoon of cayenne powder, 1 tablespoon of garlic powder (not garlic salt), 2-3 large (19 ounce) cans of beans, drained (I like to use one each of red kidney beans, white kidney beans and romano, great northern beans or black eyed peas for a bit of variety.)
Mix well and cover the pot..
Turn your slow cooker on to “auto” and let it simmer for the day.
If you use a large pot on the stove, bring it to a bubble, then turn it back to a low simmer until the beans are soft, stirring occasionally.

    Easy Oven-Baked Frittata

Frittatas are easy; this one is even easier. Remember this recipe when you need a great dinner dish in a hurry. Serve it with your favorite bread and a garden salad.

    Ingredients

1 cup of diced vegetables (onions, green peppers, etc.)
    6 eggs
    dash of pepper
    1/8 teaspoon salt
    2 tablespoons grated parmesan cheese
1 cup shredded cheddar, mozzarella or other cheese

    Directions

Preheat the oven to 350 degrees

    1. Sauté the vegetables until soft. Alternately, you can steam the vegetables in the microwave until they are tender.
    2. Beat the eggs, pepper, salt, and parmesan cheese together. Put a tablespoon of oil in a heavy, oven-proof skillet. Pour the egg mixture into the pan and scatter the vegetables on top.
    3. Bake for 15 minutes or until a knife inserted in the center comes out clean. Immediately sprinkle the remaining cheese on the top and let it melt.
    4. Slide your frittata onto a plate and serve.

    Chicken Casserole ala Campbell

8 chicken thighs, trimmed of excess skin and fat
    garlic powder
    3 onions, sliced
1 can cream of mushroom soup
    3/4 can water
    1 tsp. pepper
    salt to taste (if necessary)
    1 tbsp. worcestershire sauce
    1 tbsp. whole grain mustard

    1. Sprinkle chicken generously with garlic.
    2. Over medium-high heat, heat oil in an oven-proof skillet (like an enamelled cast-iron one).
    3. Brown chicken on all sides. Set aside.
    4. Saute onions until soft.
    5. Add soup, water, pepper, worcestershire sauce and mustard. Mix with a whisk until smooth.
    6. Taste and adjust the seasoning at this point.
    7. Place chicken in the skillet.
    8. Bake in a 350 oven for 30 minutes.
    9. During the last 5 minutes or so, turn on the broiler to brown and crisp up the chicken skin. Watch that it doesn’t burn!

Serve this with mashed potatoes with the sauce as your gravy.
