    Cheesy Chicken Pasta.
    Chicken.
Poach your chicken pieces in some stock and set aside, until cool enough to handle, and de-bone.
    Pasta.
Place in salted boiling water and cook until you get the degree of cooking you like.
Penne or Elbows will do very well here.
    Sauce.
Make a normal white sauce and add some grated tasty cheese, remove from heat and stir until it is smooth.

Combine everything and place in an oven proof dish, sprinkle with more cheese and bake until it is bubbling and the cheese has melted and started to brown.

I have a super easy and quick one I love…

    Chicken Saltimbocca
    Ingredients
    1/4 cup flour
    1 lb boneless chicken cutlets
    1 tablespoon canola oil
    4 slices prosciutto (about 2 1/2 oz)
    1/8 teaspoon pepper
4 small fresh sage leaves (rinsed)
    4 thin slices Swiss cheese
1 cup specialty tomato basil pasta sauce

    Steps
    1. Preheat large sauté pan on medium-high 2–3 minutes. Place flour in shallow bowl. Dip chicken in flour, coating both sides, then shaking off any excess (wash hands).
    2. Place oil in pan; swirl to coat. Add chicken (wash hands); cook 3–4 minutes on one side.
    3. Turn chicken; reduce heat to medium. Place one slice of the prosciutto on each cutlet and sprinkle with pepper; add one sage leaf and top with one slice of the cheese. Cover and cook 3–4 more minutes or until internal temperature reaches 165°F. Use a meat thermometer to accurately ensure doneness.
    4. Meanwhile, place pasta sauce in microwave-safe bowl. Cover and microwave on HIGH 3–4 minutes or until hot. Spoon sauce onto serving plates, place chicken on sauce, and serve.

    Chicken and Dumplings

2 cans white meat chicken (I use the kind you get at Sam’s 5 cans for approx $10)
1 quart chicken broth either Swanson’s or store brand
3 to 4 stalks celery finely chopped
    1 small onion diced
    2 to 3 tablespoons butter
    1/2 to 1 cup flour
    1 can Grands refrigerated biscuits
1/2 cup half and half or milk
    salt and pepper to taste

In a large deep pan saute onion and celery in the butter for about 5 minutes over medium heat. Add two cans of chicken including the broth and the quart of chicken broth. Bring it to a boil. Cut each biscuit into 6 even pieces. Dredge the cut biscuits in the flour. Drop them into the boiling broth. After you have dropped all the biscuits into the broth, cover the pan, turn down the heat and let the dumplings cook for about 10 minutes. Mix two tablespoons of the flour used to coat the biscuit pieces with milk or half-and-half. Add this mixture to the chicken and dumplings and cook an additional minute or two to thicken the broth. Add pepper and salt if necessary. I add a couple of dashes of nutmeg and some parsley.
