What are some easy recipes a teen can make?

a lazy teen with a limited budget and ingredients. I want to know some simply meals I can create. And please don’t just copy and paste some long complicated recipe from a cooking site. I want to know your recipes that are easy and preferably with no meat
I don’t like chicken or beef

    Pasta and sauce

    Grilled cheese and tomato soup

Vegetable stirfry with pork, shrimp, fish, or tofu

Hummus and pita (mashed seasoned chickpeas…also known as garbanzo beans)

Babaganoush (mashed and seasoned eggplant) and pita

Grilled ham steak with mashed potatos and baby carrots.

    Bean and cheese burritos

    Tomato, Basil, Spinach, Pasta

(everything is by your taste, read and then decide what you might like)

    1. Spaghetti noodles (or your choice of pasta)
    2. Chop up some tomatoes – I prefer Roma tomatoes (less juices)
    3. Minced garlic
    4. Green onions (I prefer only the green part)
    5. Frozen spinach -thawed/drained well
    6. Basil (I’ve also used Italian seasoning)
    7. Olive oil (just enough to mix together above and have it coat some pasta, you don’t want you pasta slimy)

mix #2-7 together, let sit at least 1hr (I like a few hours)
cook pasta, toss with tomato mixture

I have also added shredded mozzarella cheese or cut string (mozzarella) cheese.

It is really easy to make this your own. It is fairly light and a nice change.

Saute the onion and garlic in a little olive oil. Add the ground beef and brown. Add the diced tomatoes, including the liquid in the can. Simmer until the liquid is mostly reduced…5 to 10 minutes. Stir in the macaroni and Cheddar cheese soup. Heat through.

You can always add more cooked macaroni if you need to stretch the dish a bit.

    Spaghetti Pizza:
    A Kid Favorite:
    1 pound box spaghetti noodles
    1/2 cup milk
    1 large egg
    1 Jar Marinara Sauce
1 pound ground beef-use crumbled tofu
    2 cups shredded mozzarella cheese
    13 x 9 glass baking dish

In a large stock pot boil water to cook spaghetti, follow package directions. Drain. Measure milk in large bowl, add egg, mix well, add spaghetti and mix well.

While spaghetti is cooking brown lean ground beef in large saute pan. Drain excess fat, return to pan and add the marinara sauce. Simmer on low.

Lightly grease a 13 x 9 glass baking dish. Pour spaghetti into dish, top with meat mixture and spread cheese on top. Bake for 20-25 minutes uncovered or until cheese has melted.

You could use a mild sausage or turkey sausage for a different twist.

Rice and beans- you can cook the rice from scratch yourself but if you don’t know how buy a packaged seasoned spanish or mexican rice, cook to the directions and when done add a can of drained, rinsed black or pinto beans. You can then take your rice and beans and put some on a tortilla with cheese, lettuce, tomatoes, onions, sour cream, guac, whatever you have and make a delicious meatless burrito. In the morning you can even make a burrito with scrambled eggs plus the rice and bean mixture and it’s delish.

Also english muffin pizzas. English muffin, spaghetti or pizza sauce, mozzarella and any toppings you have on hand (like little pepperoni slices) either baked in the oven (400 degrees) until golden brown or put in toaster oven or even microwaved in a hurry. Also could do with a pita pocket.

You could also make mac and cheese and add a drained can of tuna plus some peas or green beans (canned or frozen- if frozen throw them in the pasta water for the last 4 minutes or so of boiling.)
