    My girlfriend makes an awesome pumpkin mousse pie this time of year and it’s sooo easy to make…

    1 cup packed pumpkin
    1 small package surgarfree instant pudding mix
    3/4 cup cold milk
    1 teaspoon pumpkin pie spice
    3 1/2 cups surgar free cool whip
    1 pie crust

    Combine pumpkin, pudding mix, milk, spice, and cool whip in medium mixing bowl. Pour into pie crust and refridgerate for at least one hour. Do NOT follow the directions on the pudding box make sure you only use the milk in this recipe.

    An appropriate food for a person with diabetes depends on the way they treat their condition. A person who takes insulin can eat cake or cookies and just take appropriate insulin. You want to cut carbs in a recipe – just replace the sugar with Splenda. However, flour and some other ingredients will still add carbs to whatever you are making.

    Christopher – what makes that recipe good for diabetics? Sounds like there’d be significant carbs in that tasty dish. What is the carb count per serving? What is the serving size?

    look at the American Diabetes Association website to get “proper” diabetic recipes.

    Mostly they cut out the salt, sugar and fats from anything and everything. They think a serving of 45 grams of carb is good dessert or main dish.
