Corned beef brisket is good and very simple. Buy a corned beef brisket and put it in the crockpot with the seasoning packet. Add a quartered red onion, a couple potatoes in wedges, a few bay leaves, and a small handful of peppercorns. Add 4-6 cups of water and a light beer. Cover and cook on high all day. It comes out so tender and yummy. And the leftovers are good the next day in either sandwiches or hash.
