Do you have 2 minute noodles in your country ? If you do, here are some ideas.
1. Microwave the noodles in salted water then drain.
Cook some fresh or frozen vegetables.
Drain these then add to noodles.
Add some sauce from a jar. There are many to choose from.
For some protein, add some tinned tuna or salmon or
buy a BBQ chicken and chop up the breast fillets.
2. Follow the first 3 steps from the recipe above but drain the
noodles and vegies really well. You are going to make an easy
” Frittata “.
Beat 2 eggs in a bowl with some salt and pepper to taste.
Use 2 eggs for each packet of noodles that you use.
Add some grated cheese and then other ingredients and mix
well but gently.
Grease an oven-proof dish with margarine or use one of the
cans of oil spray.
Pour all ingredients into the dish and spread them evenly.
Add more grated cheese to the top.
Bake in a regular oven at a moderate temperature
( 350 degrees Fahrenheit ) for 30 minutes.
In the last few minutes you might want to brown the cheese
under the grill element but be careful, stay with it and watch
so it doesn’t burn.
Remove dish and let it cool for a while so that you can make
a fresh salad and maybe some herb / garlic bread to go with it.
Cut the portions with a knife and use a spatula to serve so it
doesn’t fall apart.
3. Easy lasagna
Buy ready to use lasagne sheets, jar of Bolognese sauce /
jar of Bechamel or any cheese sauce / some minced beef
To assemble put a thin layer of mince sauce on the base of a greased oven-proof dish, the a layer of lasagne sheets, then a generous layer of mince sauce then a thin layer of cheese sauce.
Repeat this as many times as the depth of your dish allows but not right to the top because it will spill over when it cooks.
The last layer should be meatm then cheese sauce and then add some grated cheese. Bake in moderate oven, follow instructions on Lasagne packet. It should take about 40 minutes.
Serve with salad / vegetables and bread.

Cake cookies! So easy and quick, and yummy!
Box of cake mix (either chocolate or white work best)
1 egg, or 1 small container of egg substitute
1/2 cup oil (can use approx 1/3 cup oil if using egg substitute)
Mix all three together. It will seem a little dry. Spoon onto greased cookie sheets to make small cookies. Bake for 8 minutes at 325. Move them to a paper plate or paper towel to cool.
They will look a little underdone when they come out, but when they firm up, they’ll be really moist and fluffy.
Enjoy! 🙂

Fettuccine with Shiitake Mushrooms and Basil
2 tablespoons extra-virgin olive oil
3 cloves garlic, minced
2 ounces shiitake mushrooms, stemmed and sliced
2 teaspoons freshly grated lemon zest
2 tablespoons lemon juice
1/4 teaspoon salt, or to taste
Freshly ground pepper to taste
1/2 cup freshly grated Parmesan cheese
1/2 cup chopped fresh basil, divided
Bring a large pot of lightly salted water to a boil for cooking pasta.
Heat oil in large nonstick skillet over low heat. Add garlic and cook, stirring, until fragrant but not browned, about 1 minute. Add mushrooms and increase heat to medium-high; cook, stirring occasionally, until tender and lightly browned, 4 to 5 minutes. Stir in lemon zest, lemon juice, salt and pepper. Remove from the heat.
Meanwhile, cook pasta, stirring occasionally, until just tender, 9 to 11 minutes or according to package directions. Drain, reserving 1/2 cup cooking liquid.
Add the pasta, the reserved cooking liquid, Parmesan and 1/4 cup basil to the mushrooms in the skillet; toss to coat well. Serve immediately, garnished with remaining basil.
